When somebody asks you if you want Mexican food, the answer is always yes. Even if you’re like my charmingly English husband who calls all Mexican food fajitas, it’s still gonna be awesome. Spicy, meaty, cheesy. There’s just so much awesome. And with Cinco de Mayo right around the corner, baby you better get ready. Here are a dozen recipes for you to love.

Bacon-Wrapped Jalapeno Poppers are so many kinds of awesome I can’t even begin to explain. There have never ever been leftovers. 

It’s almost time for picnic season. Bring Southwest Pasta Salad and be everybody’s favorite person.

I want to eat all the Buffalo Chicken Tacos by myself. Back up off my spicy chicken tacos, yo! 

Spicy Chicken Chili is the perfect thing to make a lot of people outrageously happy all at once. 

We don’t wait for a special occasion to make My Mom’s Tacos. We actually eat them about every other week. Last time Geoff ate his with half a scorpion pepper. He’s insane.

Vegetarians love Mexican food, too. Feed them Mexican Lasagna and they’ll love you forever.

Jalapeno Deviled Eggs are a spicy version of one of the most classic potluck dishes ever. Give the church ladies a surprise!

Chili with Gnocchi is a great way to stretch a small amount of meat, and a great way to burn your mouth off. Go ahead and make it ridiculously spicy. What have you got to lose?

You’re going to need a drink to keep your face from setting itself on fire. Water is useless against chilis. A Passion Fruit Margarita will satisfy all your tropical drink needs. 

In case you need to take this Mexican action to the grill, you can always bring out Spicy Southwest Burgers. Cheeseburgers are my power animal. 

Tequila’s not only for margaritas. Geoff also made this Mexican Bird of Paradise cocktail with tequila and pineapple juice. Sometimes experiments turn into something awesome. 

Please everyone with these Picky Eater Chicken Enchiladas. Even I’ll eat them without picking anything out. 

Seriously, just go and eat all the Mexican food you can get your hands on before it’s too late! No excuses!

The Olympics are here!!!! Most days, I couldn’t care less about sports, but there’s something about the Olympics that just draws me in. I love all the stories of triumph, the drama of the competition, the young kids working their asses off for something they truly love. Other people’s passion is contagious and I’m highly susceptible.

Actually watching can be a bit difficult since we’ve cut the cord and only have Netflix. We don’t even have an antenna to get network channels. C’est la vie. It’s worth the rest of the time. I was able to “borrow” the necessary information to watch the live stream, which isn’t ideal, but it’s definitely better than paying for cable.

To celebrate, we decided to make White Russian Milkshakes. Even though it’s been a bit chilly here in paradise, it’s never too cold for ice cream, and the high alcohol content helps to keep you warm anyway. This milkshake tastes exactly like a white russian, which probably isn’t Russian at all, but I certainly didn’t want to eat boiled cabbage to celebrate the opening ceremonies. Cocktails are always better.

You can certainly adjust the alcohol content to your desired level. I let my husband make these, and he can be a bit heavy handed. But unless you’re actually training for the luge or something, I can’t think of any reason why you shouldn’t enjoy a potent cocktail while watching all those skinny kids march past. It will make the whole thing extra awesome.

Ingredients
  1. 1 quart vanilla bean ice cream
  2. 1 cup vodka
  3. 1 cup Kahlua
Instructions
  1. Put all ingredients in a food processor or blender and mix until smooth. It's a milkshake. Don't freak out.
  2. Pour into four glasses and prepare for your lips to go numb.

We’re still being smart with our leftovers around here, and at my house, we have lilikoi or passion fruit literally dropping on our heads. My husband and my daughter made two jars full of lilikoi syrup while I was out getting my hair cut, and while I love passion fruit green tea and will certainly have plenty, I knew this time I needed to make a cocktail.

It’s passion fruit margarita time. The end of a long and crazy week requires a cocktail of the sweet tart variety. Preferably strong, bonus points for a lovely color and an awesome sugar rim. Do it up right. You worked hard; you deserve it.

We mix tequila, triple sec, lilikoi syrup, and a bit of lime juice, pour it over crushed ice, then put our feet up under a palm tree if we can find one. If not, maybe draw a palm tree, and tape it to the wall. It’s almost the same thing. Put your favorite music on. Order take out. Make things easy on yourself. Then commence being awesome!

Wasting food is like throwing money in the trash. Making delicious food out of the stuff that’s taking up space in your fridge tastes good, helps you clean, and saves you money. It’s nothing but win. Wrapping up a week of leftovers with a tasty cocktail gets you a gold medal.

A sweet and tart margarita with a tropical flair.

Ingredients
  1. 3 ounces passion fruit syrup
  2. 2 ounces tequila
  3. 1 ounce lime juice
  4. 1 ounce triple sec
  5. 1 tablespoon sugar
  6. crushed ice
Instructions
  1. In a cocktail shaker or a separate glass, combine syrup, tequila, lime juice and triple sec. Stir or shake to combine.
  2. Use water or a bit of lime juice to wet the rim of your glass. Put the sugar on a plate, then press the rim of your glass into the sugar.
  3. Fill your cup with crushed ice and pour your margarita over it. Sip and smile.
