Adulting is basically the worst. Especially washing dishes and paying bills. Oh, and having to go to work when there’s nothing to do.I would rather have a root canal. Just let me go outside and play. 

Sometimes, though, I like to enjoy the fun side of adulting. Specifically, cocktail parties. I occasionally get the urge to put on a sparkly dress, high heels, and lipstick and eat tiny foods with foreign cheeses all while drinking cold spirits. I can pretend I’m chic and sophisticated for five minutes. It’s awesome.

If you’re looking for a suave adult beverage this season, I recommend the Lycheetini. Good news is, you can use canned lychees, so there’s no obnoxious peeling involved. If you can’t find lychee juice, you could just use some club soda and some of the syrup from your canned lychees. Oh, and definitely keep saying lychee over and over again. It’s fun.

This cocktail is potent, refreshing, and just a tiny bit sweet. It’s pretty much the perfect combination. You can make them one drink at a time or multiply quantities to make a pitcher to share with friends. They’ll be so impressed.

  1. 1 ounce white rum
  2. 2 ounces vodka
  3. 4 ounces lychee juice
  4. Ice
  5. Lychees (from a can)
Instructions
  1. Add ice to your cocktail glass, then pour in rum, vodka, and lychee juice. Stir to combine. Add lychees for garnish and snacking.

I think one of the things I love about being in the kitchen is the quiet simplicity of it all. If I listen to music instead of news podcasts, I can sort of shut the world out for a moment and just focus on the food. I can avoid the seemingly endless stream of violence, cruelty, and hate that have been so sadly dominant lately. I can stop being baffled by our inability to comprehend our interconnectedness. I can escape politics and nationalism and territorial disputes. For a few minutes, I can focus on something else, and I really need that in my life.

Food brings people together. Even when it is scarce, most people are happy to share a meal with others. When I feed people, and I see a smile on their faces, I know I’ve taken them away from their troubles and fears for just a moment. We all have to eat, but when food brings us together in a joyful moment, there’s nothing better in all the world.

This Cranberry Margarita is another spontaneous recipe made from things I already had in my house after Thanksgiving. It’s Christmas red, and the cranberry sugar rim reminds me of snow and holly and general cheerfulness. If you have any frozen cranberries left in your freezer, they make excellent ice cubes. Sadly, I was all out.

Here’s the deal. Most of us want the same things. We have to start focusing on what unites us rather than what divides us. We have to realize that every life is as precious as we believe our own to be, and that none of us is alone. Christmas seems like a great time to do that.

Ingredients
  1. 1 tablespoon sugar
  2. 1 tablespoon dried cranberries, chopped finely
  3. 1 ounce tequila
  4. 1 ounce triple sec
  5. 6 ounces cranberry juice
  6. Lime wedge
Instructions
  1. To rim your glass, you'll need to combine the sugar and dried cranberries on a small plate. Wet the rim of your glass with water and place it upside down on your sugar plate. Use your fingers to gently press the sugar and cranberry bits onto the edge of your glass. Turn the glass upright and allow it to dry for a minute or so.
  2. In a measuring cup or another container (something with a spout will be less messy) stir together tequila, triple sec, and cranberry juice.
  3. Carefully place some ice in your rimmed glass and pour your cocktail over the ice. Garnish with a wedge of lime to squeeze in just before drinking.

Lucky me, this winter is forecast to be the worst Scotland has seen in a very long time. I need sweaters, people. Lots and lots of cozy sweaters. And endless supplies of hot chocolate.

I drink possibly too much hot chocolate made from a mix, though I haven’t yet found one here that’s as good as Swiss Miss, but when I’m feeling fancy or god forbid I can’t get my hands on hot chocolate mix, it’s ridiculously easy to make my own hot chocolate in under three minutes.

The beauty of making hot chocolate from scratch is that you can create your own fancy flavors. Just peruse your pantry and try something different every time. Or go plain. That’s great, too. I especially like to fortify my evening hot chocolate with something boozy. Baileys, Kahlua, or Frangelico are my favorite choices, but again, the possibilities are endless.

I pumped this hot chocolate up with a splash of vanilla extract. I also stirred in a bit of cream since I had some in my fridge. I usually only keep skim milk in the house, so putting back a bit of the fat makes it a bit more luxurious.

One last note, you can make this right in the mug if you want to save yourself from washing more dishes, but I like to give myself plenty of space to stir, so I make it in a microwave safe measuring cup and then transfer it to a mug after it’s heated. Do what you want. It’s your life and you gotta love it.

Ingredients
  1. 1 heaping teaspoon cocoa powder
  2. 2 heaping teaspoons sugar
  3. 1/4 teaspoon vanilla extract
  4. 2 teaspoons cream (or milk if you don't have cream in your fridge)
  5. Milk to top up to six ounces
Instructions
  1. In a mug or microwave safe measuring cup, stir together cocoa powder, sugar, vanilla, and cream to form a paste. Add milk in slowly, stirring as you go, until your mug is full or you're up to six ounces in your measuring cup. Stir or whisk until smooth.
  2. Heat this in the microwave for 1-1/2 to 2 minutes depending on how hot you like it. Give the hot chocolate another stir and transfer to a mug if it's not already in there.
  3. Add booze and/or whipped cream and/or marshmallows to our hearts content.

I always thought of the Scottish as champion drinkers. There’s a pub on every corner. They have their own class of whiskey with almost as many distilleries as castles. It’s cold up here, and booze is a handy way to keep warm. I never dreamed I’d have difficulty buying liquor here.

If you’re looking for whiskey or gin, you’ll be quite pleased with the selection. There’s even a ton of great flavored vodkas and more types of Pimm’s than I could have imagined. There’s generic Bailey’s and Kahlua so you can spend your precious pennies on wool sweaters. Beer aplenty and enough types of cider to make my little beer-hating heart sing. But try and find a bottle of decent and inexpensive tequila, and you might be in trouble. The UK needs more Mexicans.

But I’m no stranger to ingredient hunting and taking what I can get. We’re taking margaritas into autumn by combining them with sweet apples. We’re saying goodbye to limes and light tacos and all things summer and switching gears to cheesy enchiladas and apply awesomeness.  It’s always the right time for margaritas. You just have to make sure they’re dressed appropriately.

If you can get some type of old-timey jug of of gorgeously fresh-pressed unfiltered apple cider, go with that. If not, use whatever apple juice is handy. Don’t let anything stand in your way. All the cider is fermented here so…

  1. 1 ounce Triple Sec
  2. 1 ounce tequila
  3. 3/4 cup apple juice or cider
  4. Apple slices and a cinnamon stick, optional
Instructions
  1. In a short glass filled with ice, add Triple Sec and tequila, then half a cup of apple juice. Give it a quick stir. If you're adding any fruit and/or ice to the glass, I'd put this in first, and then top up with more apple juice as needed. Pop in a cinnamon stick for stirring and drink away.
