Mint Chocolate Chip Cookies with fresh mint leaves

Mint Chocolate Chip Cookies are an easy variation on your favorite cookies. Chopped up mint-infused chocolate replaces some of the chocolat chips for an awesome, minty treat.

Ingredients

  • 1 cup (8 ounces) unsalted butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 21/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips
  • 1 cup mint flavored chocolate

Instructions

  1. Preheat oven to 375 F (190 C) and line a cookie sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, beat butter, sugar, and brown sugar together with an electric mixer for about three minutes. It should be light and fluffy.
  3. Continue mixing and add the eggs one at a time, followed by the vanilla until everything is completely blended.
  4. In a small mixing bowl, combine flour, baking soda and salt. Put your mixer on low, and slowly add in the dry ingredients. Mix until just combined.
  5. Add the chocolate, and mix on low for a few seconds until incorporated.
  6. Scoop your cookies onto your waiting cookie sheet, about two inches apart. Baking for about ten minutes or until just lightly brown on the edges. Allow cookies to cool on the baking sheet for three minutes before transferring to a wire rack to cool.
  7. Pack them up and share them with friends.

Notes

Don’t worry too much about the exact measurement of the chocolate. You want roughly three cups total, so if you buy a bar of mint chocolate, just chop up the whole thing, then make up the rest with chocolate chips.
