Some day I might get my life together and bring you a legit, blow your mind recipe. But for right now, we’re eating food that is almost too good to be true. So much deliciousness with so little effort hardly seems real. 

Who knows what’s going on with my life. I certainly don’t. I just can’t get it together. Blah. Whatever.

Let’s eat cheeseburgers. And not just any cheeseburgers. We’re going to mix up our favorite burger recipe or be extra lazy and pick up some quality burger patties from the store. Get yourself some delicious buns. Slice an onion and sautee it until soft and golden if you like. 

The real star of this show is the blue cheese spread. It’s child’s play. Soften a block of cream cheese, crumble a wedge of blue cheese, six ounces should do it, add them both together in a bowl, and smash away with a fork until combined. Spread this mixture generously onto your bun. Don’t skimp. I mean, really go for it. It’s just so good.

I’ve been thinking a lot lately about what I want to do versus what I should do. There are a lot of work stresses that can’t be avoided. I need the paycheck, so there’s nothing I can do about it. But in the rest of my life, I want to stop putting unnecessary pressure on myself. I want to feel relaxed and happy. I wonder if I can set aside my need to be perfect and productive and just let myself do what feels good. 

I mean, eventually I’ll have to clean the bathroom and do the laundry, but there are things I tell myself that I need to do that can probably just be set aside until I’m in the mood and it feels right. But there’s also a part of me that feels ridiculous just typing these words. Relaxed and happy? That’s for lazy people. What’s the right way to go? I’m asking for a friend.

I can tell you that what I almost always want to eat is cheese wrapped in carbs. Brie En Croute is where it’s at. Butter, flaky puff pastry wrapped around gooey brie filled with something slightly sweet and something crunchy. It’s pretty much pure heaven.

A recipe is not necessary here. Get yourself a wheel of brie and some store-bought puff pastry. Check your puff pastry package for the recommended oven setting. Place your brie in the middle of your pastry, dig around in your fridge for some fancy jam, or not so fancy but not super sweet, then go to  your pantry and grab some nuts. Pile these up on top of your cheese. 

Next, fold the pastry over your cheese and make sure it’s sealed up completely, not like mine in the photo. Brush it with a beaten egg and bake for about 20 minutes or until your pastry is puffed and golden. Serve it warm and gooey with some crackers.

Yes, I know we’re solidly in February by now, but January completely kicked my ass there at the end. A bunch of stupid crap that nobody cares about has sapped my energy, but to be honest, I almost wish I had been in a coma for the past couple of weeks so I wouldn’t have to wake up every morning and read the horrible, scary news. But guys, we’re gonna get through this together and be more awesome than ever before. The struggle is real, but so is my love for humanity and my desperate desire to evolve into Star Trek culture where we finally figure out that we’re all connected and can stop wasting our energy fighting each other and start focusing on sharing some damn compassion.

Woe, that went off the rails a bit. Right. January. Good stuff.

I saw La La Land and was totally won over. I’ve had crushes on both Emma Stone and Ryan Gosling for ages, but they really broke my heart here. If only they’d spent a couple more weeks in dance class working on their arm extension and general epaulement. If you’re not a former dance teacher, you’ll never notice it, and even if you are, City of Stars will still make you cry. This film is completely immersive. See it in the theatre to be fully transported.

Or if you’re not up for leaving your house, watch Sing Street on Netflix. I promise you’ll be very very happy.

I ate some outstanding schnitzel at Bavaria Brauhaus in Glasgow. The food was stellar. You’ve gotta check it out. We also had some fancy burgers at Drygate Brewery. I’d definitely do that again.

Best news of all, we got a cat!!! I am a full on cat person, but because we were renting, I’ve lived in a cat free home since 2009. I’m so happy to have Leeloo in our house running around chasing shadows, knocking stuff over, and being generally awesome. I will never stop posting her picture. She’s a beauty.

Internet food is always my friend. Scottish people do a lot of things well, but they don’t really do Mexican food. I can’t wait to try making my own Spicy Chorizo Queso Dip a la Love and Olive Oil. I just hope I can find the right cheese.

Also, Taco Frachos, ’cause duh.

I’m totally smitten with these Chocolate Hand Pies from Sally. They’ve almost got me wanting to be into Valentine’s Day. 

Classic Crunchy Peanut Butter Cookies | How to be Awesome on $20 a Day

Your January favorites were Cheese-Stuffed Meatloaf, Peanut Butter Fudge, and Classic Crunchy Peanut Butter Cookies. I could probably eat about 47 peanut butter cookies right now.

February will be over in a flash, and before you know it, the light will be back and we’ll be singing in the sunshine. Get into it.
