This Super Simple Shortbread is made with only three ingredients. They’re crispy and buttery and so easy. Perfect with a cup of tea, the hardest part is sharing.
I saw something on Instagram the other day about being a lazy perfectionist. This blew my mind because I didn’t know, until that very moment, that this is me. I can be very meticulous and methodical, but I also don’t like doing one more thing than I actually have to. I can sit still for ages, but I need to be taking in information so the time is not wasted. I love being lazy, but feel guilty about it.
I’m definitely going to look into this more in the hopes of getting some insight into my own personality. Does this describe you at all? Have you even heard of this? Please leave me a comment so I can understand what’s wrong with me.
This Super Simple Shortbread is the epitome of lazy perfection. With hardly any work at all, you can get a buttery little cookie that tastes absolutely heavenly. You can also tell that I’m a lazy perfectionist because I did not measure my shortbread fingers before cutting them, so they’re all slightly different sizes. But I assure you, they tastes just as delightful.
How to make Super Simple Shortbread
To make this shortbread, you simply need to mix together butter and sugar until light and fluffy, then mix in the flour and a pinch of salt. Yes, technically that’s a fourth ingredient, but everyone knows salt and water are free. You may have a bit of a shaggy mixture, but not to worry. Transfer it to an 8×8 baking dish, and simply press it evenly into the pan. It will all come together as you press it into the edges. Bake the dough for 20 minutes or until it just starts to go golden.
Let the shortbread cool in the pan, then cut it into fingers. You can dust them with powdered sugar if you like, but they’re perfectly delightful as they are. Enjoy a finger or two with a cup of tea or coffee. They’re even better if you get to share them with a friend.
There’s never been a perfect person anywhere in the world ever. Maybe those lazy perfectionists are on to something? Let’s take a break and eat some shortbread. It’ll all be fine.
