How many lists do you have on the go on any given day? More or less than 10? I’m just wondering if I’m insane or not. On my google drive, I have seven different lists. I have another five or six on my phone. Then I have a whole notebook that is devoted solely to keeping lists. Some of them are portable, shortened versions of the google drive lists, but there are about a dozen lists that are constantly being updated in there. And then there’s Pinterest. That’s like crack for list makers. I’m crazy, right? I’m definitely crazy.

There’s just something so calming about making a list. It’s is the very essence of orderliness. When I get really bored, I find myself craving the opportunity to create a list, but I’m running out of things to make lists of. I’ve got lists for movies, books, recipes, restaurants, travel ideas, more recipes… You get the idea. Please tell me I’m not the only person who does this.

This recipe comes to you from my “next recipe” list, but more significantly from Simply Delish by Jessica Merchant. These Brown Sugar Bacon Biscuits are made with half white flour and half whole wheat flour, and I love the added texture the whole wheat adds without the biscuits losing their lightness. The brown sugar brings a subtle, deep sweetness without making the biscuits seem like dessert. And then there’s the bacon. Smoky, crispy, heavenly bacon. What’s not to love?

These biscuits are the perfect balance of savoury and sweet. They’re equally suitable for an a fried egg and a thick slice of cheddar cheese as they are to being slathered with salted butter and honey or maple syrup. I haven’t tried it yet, but I imagine they’d be the perfect dunker for something like butternut squash soup. I halved the recipe since it’s just the two of us. It’s basically impossible to stop eating these, so don’t make more than you can handle.

Ingredients
  1. 1/2 cup plain flour
  2. 1/2 cup whole wheat plain flour
  3. 1/6 cup brown sugar
  4. 1-1/2 teaspoons baking powder
  5. 1/2 teaspoon baking soda
  6. 1/8 teaspoon salt
  7. 1 ounce cold unsalted butter, cut into chunks
  8. 2 slices bacon, cut in small pieces and cooked until crisp
  9. 1/2 cup buttermilk
Instructions
  1. Preheat your oven to 425F (220C) and line a baking sheet with parchment.
  2. In a mixing bowl, gently whisk together plain flour, whole wheat flour, brown sugar, baking powder, baking soda, and salt until well combined.
  3. Use your clean fingers to rub the cold butter into the dry ingredients until you have a mixture resembling wet sand.
  4. Stir in your bacon pieces to evenly distribute.
  5. Finally, stir in the buttermilk with a spatula or wooden spoon until the mixture just comes together.
  6. Turn your biscuit dough out onto a lightly floured surface, and gently press and fold it together. Pat your dough out to form a rectangle that's about an inch thick. Use a pizza cutter to cut your rectangle into six pieces. You'll have square biscuits, but you also won't have any wasted dough.
  7. Transfer your biscuits to your baking sheet and bake for 10-12 minutes. The biscuits should be golden brown on top.
  8. Allow to cool for a few minutes before devouring.

I went back to work this week, and thankfully it was only for two days because any longer might have killed me. Two and a bit weeks of being totally chill was absolute bliss, so any level of responsibility after that is a bit of a shock to the system. It reminded me how grateful I am to work indoors in a clean, heated office, even if not everyone I work with smells extremely awesome. That’s what they make air freshener for, right?

Eating at work is definitely not as fun, though I do consume a lot fewer calories when I’m at the office. To be honest, I’ve spent the past few days randomly stuffing popcorn and peanut M&Ms in my face that were left over from last time we went to the movies. Maybe I should make 2018 the year I eat well at work. Does anybody know how to do that? Send tips.

We’re still doing it up right at the weekends, though. I made you some Herbed Biscuits & Creamy Sausage Gravy. Don’t panic, British friends. Please trust me when I tell you that this recipe is completely awesome. 

The biscuits are so tender and flavorful with the perfect thin crispy crust on the outside. They’re flecked with green onion and fresh parsley for added flavor, and they smell completely perfect coming out of the oven. I don’t even bother to use a biscuit cutter. I just pat out the dough and divide it into four with a pizza cutter. 

The gravy is not strictly traditional, but pork is so lean these days, making a roux ensures that you have plenty of gravy to go around. We actually had a little leftover that still tastes awesome on some buttered toast. My favorite sausage for gravy in the US has got to be Jimmy Dean Hot, but in the UK the sausage is, shall we say, a bit more subtly flavored. Cumberland sausage is the way to go, and just make sure you check your gravy for seasoning. You may need to add a bit more salt, pepper, and cayenne.

For the biscuits
  1. 1 cup all-purpose flour
  2. 1/8 teaspoon baking soda
  3. 1/2 teaspoon baking powder
  4. 1/2 teaspoon coarse salt
  5. 3 tablespoons unsalted butter, cold
  6. 1/2 cup buttermilk
  7. 1 green onion, green top only
  8. 2 tablespoons chopped fresh parsley
For the gravy
  1. 1 green onion, white part leftover from the biscuits
  2. 1 pound pork sausage
  3. 4 tablespoons unsalted butter
  4. 4 tablespoons flour
  5. 1 cup single cream
  6. 1 cup milk
  7. Cayenne, salt, and pepper to taste
For the biscuits
  1. Preheat your oven to 450F.
  2. In a mixing bowl, combine flour, baking soda, baking powder, and salt. Cut in your butter in your favorite way. I find it easiest just to use my fingers to squish the butter and flour together until I have a coarse mixture.
  3. Add in the buttermilk and use your scissors to cut in the green onion and parsley. Mix it all until it just starts to come together. Overmixing will make your biscuits tougher. I had to add another small drizzle of buttermilk to make it work.
  4. Turn your biscuits dough out onto a lightly floured surface and fold it together just a few times until it comes together and then pat it out until it's about an inch thick. Use your pizza roller to cut your dough into four sections then transfer your biscuits to a parchment lined baking sheet.
  5. Bake for 10-12 minutes or until very lightly golden. Set your biscuits aside until they're ready for gravy action.
For the gravy
  1. Scissor the white part of your green onion into a large skillet and add your sausage. If you have links, remove the casing, obviously. Cook these together over medium high heat, crumbling the sausage as it cooks. Once your sausage is cooked through, remove the sausage and onion to a plate or bowl using tongs or a slotted spoon.
  2. Add your butter to your skillet and melt it. Once it stops foaming, sprinkle in the flour and whisk it together with the butter. Depending on how much grease your sausage left behind, you may need to another sprinkle of flour. You want the mixture to be pasty. Cook this mixture until it starts to smell nutty.
  3. Slowly whisk in your cream and milk in small installments whisking out any lumps before you add more. Eventually you'll have a creamy, dreamy mixture.
  4. Add your seasonings and fold your sausage and onions back into your gravy. Taste for seasoning and adjust as needed.
  5. Split open your biscuits, scoop on a bunch of gravy, and go to town.

Does anyone ever just have a calm and relaxing December? I love the holidays, but sometimes it just feels like pure frenzy. Christmas parties are wonderful. But the older I get, the longer it takes to recover. I’m staying in my pajamas all day today, and you can’t stop me. I need pure lazy introvert time. December is only going to get more hectic, so I’m taking a moment to focus on doing absolutely nothing.

Lazy days require simple comfort food. Warm biscuits and hot soup fit the bill perfectly. This situation can only be made better by adding some bacon to the party, and maybe some tangy goat cheese for fun. I know making biscuits from scratch may not sound like everyone’s idea of relaxing, but I promise, it’s not that hard. There’s no rolling and cutting, and to me, that’s always the hard part. And if you want to be extra lazy, you can use your food processor instead of your hands to cut the butter into the flour mixture. 

These biscuits are light and fluffy and loaded with flavor. There’s a bit of crunch from the green onion and creaminess from the goat cheese, but you know that bacon, always bacon, is the real star of this show. You’re worth it.

Ingredients
  1. 6 slices bacon, cooked til crisp and chopped
  2. 3-3/4 cup flour
  3. 1-1/2 tablespoons baking powder
  4. 1-1/2 teaspoons baking soda
  5. 1 teaspoon salt
  6. 4 ounces (1 stick) unsalted butter, cold, cut into chunks
  7. 4 ounces goat cheese
  8. 2 green onions, chopped
  9. 1-3/4 cup buttermilk
Instructions
  1. Preheat oven to 425 degrees and line one or two baking sheets with parchment paper. If you only have one small baking sheet, you can make these in two batches.
  2. If you haven't cooked your bacon already, do that now. However you like to cook bacon is great. Get it chopped into pieces to get folded into your biscuit dough.
  3. In a large mixing bowl, sift together flour, baking powder, baking soda, and salt. Add your pieces of cold butter, and use your clean hands to smash and smoosh the butter and flower together until combined. You'll have a sort of sandy mixture.
  4. Add in the cooked bacon, crumble in to goat cheese, and toss the green onions into the bowl as well. Fold all this evenly throughout your buttery flour.
  5. Finally, stir in the buttermilk until combined. Since these are drop biscuits, this will be wetter than a typical biscuit dough.
  6. Using a quarter cup measure or a large scoop, plop 12 mounds of dough onto your waiting baking sheets. Bake for approximately 15 minutes or until the tops of the biscuits just show a hint of golden brown action.
  7. Serve warm.
