This past winter was nothing but hygge, hygge, hygge. We were all about comfort, and I was feeling it. Just because spring is here, I’m not about to let go of that feeling of warmth and comfort. I’m burning candles with bright, citrusy scents. I’m keeping my throw blankets handy when the temperature dips in the evening. And I’m making my very favorite comfort foods. Who’s gonna stop me?

The meatloaf evangelist is back. I’m not about to apologize because I wish I was eating this meatloaf right now. Each individual portion is studded with shredded cheddar cheese, and that glaze is everything. It’s a little bit sweet and a little bit sour, and I want to swim in it.

This mixture is very wet before going into the oven, so it. stays moist and tender. Serving up individual-sized portions means everyone gets plenty of glaze, plenty of crunch, and plenty of goodness. I’m seriously making myself so hungry right now. Serve this up with ranch mashed potatoes, and everyone will be so happy.

Ingredients
  1. 1 egg
  2. 3/4 cup milk
  3. 1 cup shredded cheddar cheese
  4. 1/2 cup quick-cooking oats
  5. 2 green onions, thinly sliced
  6. 1 teaspoon salt
  7. 1 pound ground beef
  8. 2/3 cup ketchup
  9. 1/4 cup brown sugar
  10. 1 tablespoon Worcestershire sauce
  11. 2 teaspoons lemon juice
Instructions
  1. Preheat your ven to 350 and spray a rectangular baking dish with non-stick spray.
  2. In a large bowl, whisk together your egg and milk, then stir in the cheese, oats, onion, and salt.
  3. Add the beef to the mixing bowl and gently combine with your hands. Form this mixture into four min loaves and place them in your baking dish.
  4. In a small bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, and lemon juice. Spoon this evenly over each of your meatloaves.
  5. Bake for 45 minutes. Allow to cool for about ten minutes before serving.

I’ve become a bit of a meatloaf evangelist here in the UK. I don’t know how this happened. It’s not as if I grew up eating meatloaf. I probably wouldn’t have liked it as a kid and truth be told, I still try to pick out bits of onion whenever possible. As I learned to cook, though, meatloaf became something I embraced. 

It has a bit of a bad reputation. If you overcook it or don’t add enough moisture to the mix, it can be a disappointment. But if it’s done right, it’s not only tasty the first time around with cheesy mashed potatoes, it’s equally as awesome the next day on soft sandwich bread with a healthy dose of mayo. It’s time to get on board all around the world.

This Cheese-Stuffed Meatloaf has a bit of an Italian flare. Nothing authentic or elevated. I mean, it’s just meatloaf, people. There’s mozzarella cheese layered throughout, and it’s topped off with your favorite tomato basil sauce. My sister-in-law and brother-in-law loved it. I’m starting a British meatloaf revolution.

I served this with mashed potatoes punched up with some parmesan cheese. You could probably also throw in a nice green salad if you’re into that sort of thing.

Ingredients
  1. 1-1/2 pounds ground beef
  2. 15 ounces of your favorite tomato sauce
  3. 2 eggs, lightly beaten
  4. 1 cup bread crumbs
  5. 1/4 cup chopped onion
  6. 1-1/2 tablespoons dried parsley
  7. 1 teaspoon salt
  8. 1/4 teaspoon pepper
  9. 1-1/2 cups shredded mozzarella cheese
Instructions
  1. Preheat oven to 350F.
  2. In a large mixing bowl, add ground beef, one cup tomato sauce, and all remaining ingredients except for mozzarella cheese. Gently mix all ingredients. I find it's easiest to do this with my hands.
  3. Add a third of the meat mixture to a loaf pan. Evenly sprinkle over half the cheese. Add another third of the meat, then the rest of the cheese, and finally the last of the meat.
  4. Cook your meatloaf in the oven for 30 minutes. Remove the meatloaf and spread the remaining tomato sauce over the top. Cook in the oven for another 30 minutes.
  5. Remove from oven and allow to cool for about 10 minutes before slicing and serving.

One could argue that burgers are summer food. They taste best hot off the grill, eaten outdoors, preferably next to the Pacific Ocean as the sun goes down with a cold cider in your hand. Where I come from that can happen pretty much any day of the year, but in real life, grilling an awesome burger is a summer experience.

Meatloaf, on the other hand, is decidedly a winter food. It’s hearty and savoury and comforting. Served up next to a pile of creamy mashed potatoes, it’s about as perfect as dinner can get on a chilly winter night. Even though for me, chilly winter night means it’s about 68 degrees, I’m still ready for meatloaf. And if we can make our meatloaf taste more like a bacon cheeseburger, then we have the best of all possible worlds. 

This meatloaf has crispy bacon and sharp cheddar throughout and a tangy topping of ketchup, mustard, and hot sauce because cheeseburger. This ain’t your grandma’s dried out meatloaf. This is moist, deep in flavor, and trashy as it comes. Put bacon and cheese in everything. Why not?

Ingredients
  1. 8 slices bacon
  2. 1 pound ground beef
  3. 1-1/2 cups shredded sharp cheddar cheese
  4. 2 eggs, beaten
  5. 1/3 cup bread crumbs or cracker crumbs
  6. 1/3 cup mayonnaise
  7. 1 tablespoon Worcestershire sauce
  8. 1/2 teaspoon salt
  9. 1/2 teaspoon pepper
  10. 1/4 cup ketchup
  11. 2 tablespoons yellow mustard
  12. 1 tablespoon hot sauce
Instructions
  1. Use scissors to cut bacon into 1 inch pieces and fry in a skillet over medium heat until crispy. Remove bacon pieces to a paper towel-lined plate.
  2. Preheat the oven to 350.
  3. Set aside a handful of bacon for the top of your meatloaf, then mix the rest of your bacon with the ground beef, cheddar cheese, eggs, bread crumbs, mayonnaise, Worcestershire sauce, salt, and pepper in a mixing bowl. Just use your hands to get everything nicely combined. This is a very wet mixture.
  4. You can transfer this mixture to a loaf pan, but I prefer a free-form meatloaf on a foil-lined baking sheet. There's more crispy edges this way. Just press everything together into a loaf shape.
  5. Mix ketchup, mustard, and hot sauce together in a dish. Pour this mixture over the top of your meatloaf and sprinkle on your reserved bacon.
  6. Cook your meatloaf in the oven for 50 minutes. Allow it to rest for 10 minutes before slicing.
