I’ve become a bit of a meatloaf evangelist here in the UK. I don’t know how this happened. It’s not as if I grew up eating meatloaf. I probably wouldn’t have liked it as a kid and truth be told, I still try to pick out bits of onion whenever possible. As I learned to cook, though, meatloaf became something I embraced. 

It has a bit of a bad reputation. If you overcook it or don’t add enough moisture to the mix, it can be a disappointment. But if it’s done right, it’s not only tasty the first time around with cheesy mashed potatoes, it’s equally as awesome the next day on soft sandwich bread with a healthy dose of mayo. It’s time to get on board all around the world.

This Cheese-Stuffed Meatloaf has a bit of an Italian flare. Nothing authentic or elevated. I mean, it’s just meatloaf, people. There’s mozzarella cheese layered throughout, and it’s topped off with your favorite tomato basil sauce. My sister-in-law and brother-in-law loved it. I’m starting a British meatloaf revolution.

I served this with mashed potatoes punched up with some parmesan cheese. You could probably also throw in a nice green salad if you’re into that sort of thing.

Ingredients
  1. 1-1/2 pounds ground beef
  2. 15 ounces of your favorite tomato sauce
  3. 2 eggs, lightly beaten
  4. 1 cup bread crumbs
  5. 1/4 cup chopped onion
  6. 1-1/2 tablespoons dried parsley
  7. 1 teaspoon salt
  8. 1/4 teaspoon pepper
  9. 1-1/2 cups shredded mozzarella cheese
Instructions
  1. Preheat oven to 350F.
  2. In a large mixing bowl, add ground beef, one cup tomato sauce, and all remaining ingredients except for mozzarella cheese. Gently mix all ingredients. I find it's easiest to do this with my hands.
  3. Add a third of the meat mixture to a loaf pan. Evenly sprinkle over half the cheese. Add another third of the meat, then the rest of the cheese, and finally the last of the meat.
  4. Cook your meatloaf in the oven for 30 minutes. Remove the meatloaf and spread the remaining tomato sauce over the top. Cook in the oven for another 30 minutes.
  5. Remove from oven and allow to cool for about 10 minutes before slicing and serving.

One could argue that burgers are summer food. They taste best hot off the grill, eaten outdoors, preferably next to the Pacific Ocean as the sun goes down with a cold cider in your hand. Where I come from that can happen pretty much any day of the year, but in real life, grilling an awesome burger is a summer experience.

Meatloaf, on the other hand, is decidedly a winter food. It’s hearty and savoury and comforting. Served up next to a pile of creamy mashed potatoes, it’s about as perfect as dinner can get on a chilly winter night. Even though for me, chilly winter night means it’s about 68 degrees, I’m still ready for meatloaf. And if we can make our meatloaf taste more like a bacon cheeseburger, then we have the best of all possible worlds. 

This meatloaf has crispy bacon and sharp cheddar throughout and a tangy topping of ketchup, mustard, and hot sauce because cheeseburger. This ain’t your grandma’s dried out meatloaf. This is moist, deep in flavor, and trashy as it comes. Put bacon and cheese in everything. Why not?

Ingredients
  1. 8 slices bacon
  2. 1 pound ground beef
  3. 1-1/2 cups shredded sharp cheddar cheese
  4. 2 eggs, beaten
  5. 1/3 cup bread crumbs or cracker crumbs
  6. 1/3 cup mayonnaise
  7. 1 tablespoon Worcestershire sauce
  8. 1/2 teaspoon salt
  9. 1/2 teaspoon pepper
  10. 1/4 cup ketchup
  11. 2 tablespoons yellow mustard
  12. 1 tablespoon hot sauce
Instructions
  1. Use scissors to cut bacon into 1 inch pieces and fry in a skillet over medium heat until crispy. Remove bacon pieces to a paper towel-lined plate.
  2. Preheat the oven to 350.
  3. Set aside a handful of bacon for the top of your meatloaf, then mix the rest of your bacon with the ground beef, cheddar cheese, eggs, bread crumbs, mayonnaise, Worcestershire sauce, salt, and pepper in a mixing bowl. Just use your hands to get everything nicely combined. This is a very wet mixture.
  4. You can transfer this mixture to a loaf pan, but I prefer a free-form meatloaf on a foil-lined baking sheet. There's more crispy edges this way. Just press everything together into a loaf shape.
  5. Mix ketchup, mustard, and hot sauce together in a dish. Pour this mixture over the top of your meatloaf and sprinkle on your reserved bacon.
  6. Cook your meatloaf in the oven for 50 minutes. Allow it to rest for 10 minutes before slicing.

The Thanksgivings we see on TV and on the cover of magazines usually involve a large group of family and/or friends gathered around a table overburdened with amazing food with a giant, bronzed turkey at the center of everything. When that happens in real life, it’s a beautiful thing. I’ve been a part of many huge family Thanksgiving meals, and they were awesome. That’s not always how it works out, though.

My first Thanksgiving in Taiwan, I ate a turkey bacon swiss melt by myself in the only American diner in my city. It was a bit sad. Now I’m married, and even though my husband has had to work the past three years on Thanksgiving, I no longer have to eat my turkey alone. We still live thousands of miles from my family, though, so it’s been a long time since I’ve felt the need to make an actual turkey. It was take us all year to eat one by ourselves.

Our new tradition is this Cranberry-Glazed Turkey Meatloaf. It is unbelievably tasty, has all the awesome Thanksgiving flavors, and is perfect for two to four people. Even better, you can have it on the table in a little over an hour. No need to wake up at the crack of dawn to put a giant turkey in the oven. And wait, there’s more. A pound of ground turkey costs about six bucks. I can’t remember how much a whole turkey costs, but I know it’s not six dollars.

Ingredients
  1. 1/3 cup whole cranberry sauce
  2. 1/2 cup chili sauce
  3. 1 pound ground turkey
  4. 1/2 pound sage pork sausage
  5. 1 egg, beaten
  6. 1 cup panko bread crumbs
  7. 1/2 onion, diced
  8. 3/4 teaspoon poultry seasoning
  9. 1/2 teaspoon salt
  10. 1/8 teaspoon (10 grinds) black pepper
Instructions
  1. Preheat oven to 350 and spray a loaf pan with non-stick spray.
  2. In a small bowl, stir together cranberry sauce and chili sauce until combined. Set aside.
  3. Put the remaining ingredients into a medium mixing bowl, including a third of your sauce mixture. Use your clean hands to lightly but thoroughly mix all ingredients.
  4. Press your meat mixture into the loaf pan and bake for an hour. Remove from oven and spread the rest of the sauce over the top of your meatloaf. Put it back in the oven for 10 minutes.
  5. Allow the meatloaf to rest before 10 minutes before slicing. Serve to your small family and relax. Your work here is done.
