In some ways I'm very patient. I've been building my business for two and a half years. I can tolerate quite a lot of verbal abuse from preteens before finally losing it. I can wait until I'm 43 to finally visit New York City. But when it comes to cooking and baking, especially desserts, I just cannot be bothered. I want sugar now.
This is probably why I've never tried to make French macarons. You know, the brightly colored, perfectly round, notoriously fiddly little cookies with the equally bright creamy filling. I've just seen too many people screwing them up to be tempted to make them myself. Some things are just better left to the professionals.
What makes Almond Flour Cookies so awesome?
These rustic Almond Flour Cookies are technically also macarons, but they're about a million miles from what you'd find in a fancy Paris patisserie. They're sweet and chewy and mildly addictive. The first time I tried one I was like, "oh that's not bad," but then I kept going back to the kitchen to grab another one.
This recipe is perfect for using up spare egg whites as that's one of only five ingredients in this recipe. You can make these super quick in one bowl with just a spatula or wooden spoon. You do have to pipe them, but you don't need to measure the size or use a special piping tip. Just a zip top bag with the corner cut off will work fine. I plan to make these every time I have extra egg whites from now on.

Tips for making Almond Flour Cookies
Start by adding an egg white, ground almonds or almond flour, and sugar to a mixing bowl. Stir together to form a thick paste. Then add in just about a tablespoon of flour and a bit of almond extract. If you really need these cookies to be gluten-free, you could give them a go without the flour and see what happens.
Then you'll scoop your thick dough into a piping back and pipe these into circles. Just hold the piping bag straight up and down over parchment paper or a silicone mat on a baking sheet, and squeeze. No need to swirl or anything. Just let it spread out into a circle. I made 8 cookies with one egg white's worth of cookie dough. These bake for about 20 minutes until they're crispy on the outside and gooey on the inside.
You can leave them completely plain or decorate them with a piece of slivered almond or a candied almond which I added here just for fun. They're perfectly awesome without any decorations. They just don't look as photogenic.
They're pretty close to the same thing, but not exactly. Almond flour tends to be a bit more finely ground than ground almonds which are a bit courser. Here in the UK, ground almonds are easy to find in the baking aisle. If you live elsewhere, almond flour might be easier to get. I've used ground almonds in the cookies you see here.

Ingredients
- 75 grams ground almonds or almond flour
- 100 grams caster sugar or super fine sugar
- 1 egg white
- 1 tablespoon all-purpose or plain flour
- ½ teaspoon almond extract
Instructions
- Preheat your oven to 325 F (160 C). Line a baking sheet with parchment paper or a silicone baking mat.
- Add the sugar, ground almonds and egg white to a bowl and mix with a rubber spatula or wooden spoon. Add the flour and almond extract and stir to combine.
- Transfer your mixture to a piping bag and snip the end or use a wide piping tip to pipe 2 inch circles of cookie dough onto your baking sheet. Just holding the piping back straight up and down over the baking sheet and squeeze to let the circle fan out.
- Optional: press a slivered almond or a candied almond into the center of each cookie.
- Bake for about 20 minutes until golden and crackly.
