Okay, it’s for real spring now, so I’ve got an awesome April 5 Day Meal Plan to bring more sunshine into your kitchen. We’re all set for meatless Monday, good eating throughout the week, and some fun cooking projects for the weekend. Let’s do it.

What’s for dinner?

Vegan Sweet Corn & Roasted Bell Pepper Soup

We’re starting off Meatless Monday with a sunny bowl of Vegan Sweet Corn and Roasted Bell Pepper Soup. Do not skip out on the homemade croutons. They’re my favorite part.

Turkey Scallopini

Tuesdays can be hard, so I’m bringing you the quickest dinner ever, Turkey Scallopini with Parmesan Fried Potatoes. We’re talking 15 minutes, tops.
