Okay, it's for real spring now, so I've got an awesome April 5 Day Meal Plan to bring more sunshine into your kitchen. We're all set for meatless Monday, good eating throughout the week, and some fun cooking projects for the weekend. Let's do it.
What's for dinner?
We're starting off Meatless Monday with a sunny bowl of Vegan Sweet Corn and Roasted Bell Pepper Soup. Do not skip out on the homemade croutons. They're my favorite part.
Tuesdays can be hard, so I'm bringing you the quickest dinner ever, Turkey Scallopini with Parmesan Fried Potatoes. We're talking 15 minutes, tops.
Add in some rice and refried beans along with these Baked Chicken Taquitos, and you've got yourself a midweek feast.
Can you really have a good week if you haven't eaten any mac and cheese? This Easy Garlic Mac & Cheese is made with a no-cook sauce to make it even simpler. Some garlic bread would not go astray here, and I guess you could make a salad.
We're getting a little bit fancy for Friday and making Cider Braised Chicken Thighs with Spring Vegetables. It's really much simpler than it looks. Just add some rice, and dinner is done.
What else are we eating?
Okay, for breakfast, I'm thinking we get ahead of the game and make a whole bunch of Homemade Vanilla Pancake mix, then just have pancakes on Saturday and Sunday. What could go wrong?
Make everyone a three-ingredient, dairy-free Strawberry Banana Smoothie. It's simple and sweet and maybe a little bit good for you.
Honestly, I can't really think of a good April-related reason to make and eat Nutella Cheesecake Parfaits. They're no-bake, so maybe your kitchen is starting to get too warm to bake? Really, though, I just scrolled past them, and they looked so good, I desperately wanted one. Can you argue with that logic?
