Roasted Tomato & Mozzarella Salad – You’ll need to turn the oven on for this, but you can roast the tomatoes ahead of time, so do them in the morning before it gets too hot if that’s a concern for you.

Peanut Butter & Jelly Burger – Fire up the grill for the most awesome burger I’ve created to date. It sounds weird, but it’s totally awesome. Keep things easy and serve with your favorite chips.

Crunchy Lemon Chicken – Pound your chicken flat for quick-cooking so you don’t have to slave over a hot stove. Serve this with Maple Glazed Carrots or a crisp side salad. Bonus points if you eat it outside.

Egg Tortilla Pie – This recipe is quick cooking and endlessly customisable. It works for any time of day, and it’s nice and light for those summer days when it’s too hot to eat.

Italian Grilled Cheese | How to Be Awesome on $20 a Day

Italian Grilled Cheese – Get yourself some lovely summer anipasti and create a lovely little spread that people can pick at. Let this sandwich be the star of the show. If you have a gas grill, you could totally cook this outside.
