    August Five Day Meatless Meal Plan

    With the heat of summer still strong, we've got an awesome August Five Day Meatless Meal Plan for you. With five dinner ideas plus a breakfast, drink, and dessert, it's full of the fresh bounty of summer and totally easy and delicious.

    Because of the awesomeness that is Parmesan cheese, this meal plan isn't strictly vegetarian, and I didn't originally intend to make it meatless, but everything that looked good to me for this month just happened to be sans meat. You could certainly add in some grilled chicken or fish throughout the week if that floats your boat. No rules, just suggestions.

    What's for dinner?

    Easy Peanut Butter Hummus with flatbread

    Let's start the week with some no-cook Easy Peanut Butter Hummus. Serve it with flatbread or tortilla chips plus some crunchy carrots and bell peppers. Round things out with some other dips or meze if you like. Chips and dip for dinner is a summer staple.

    Caesar Salad with Brown Butter Croutons and a loaf of bread

    This Caesar Salad with Brown Butter Croutons makes enough to leave two people absolutely stuffed. It's totally cravable and definitely deserves a glass of chilled white wine alongside.

    Brie & Blackberry Grilled Cheese cut in half with fresh blackberries

    This Brie & Blackberry Grilled Cheese is the perfect mixture of textures and flavors. I find I'm not usually that hungry in the summer, particularly on really hot days, but you could round this out with your favorite bagged salad.

    Let's bring some fire energy to the week with a simple, quick Cacio e Pepe. Serve it with some crusty bread and a bottle of great Italian wine for an elegant weeknight feast.

    Grilled Potato Foil Packets with lemon dill creme fraiche

    I'm in love with these Grilled Potato Foil Packets with Lemon Dill Creme Fraiche. Cook these outside on the grill. Honestly, we just each take a packet and eat the whole thing for dinner, but if you want something a little more balanced, add your favorite veggie burgers or grill up some mushrooms or summer squash.

    In summer, we stay up late and make Boozy Root Beer Floats. Obviously, leave the booze out for the kids. Grown ups deserve to have fun in summer, too.

    • Greek yogurt

    • creme fraiche or sour cream
    • fresh dill

    • Parmesan cheese
    • brie
    • blackberry jam
    • fresh or frozen corn
    • sourdough bread
    • romaine lettuce
    • canned chickpeas

    Check your pantry and fridge to see if you have these on hand:

    • all-purpose or plain flour
    • baking soda aka bicarb
    • eggs
    • vanilla extract
    • milk
    • olive oil
    • cayenne pepper
    • pepper
    • butter
    • bread
