One of the magical properties of cheese is transformation. It's all about taking humble milk, adding some mystery and time, and turning it into something greater than the sum of its parts. Cheese teaches us to transform into our most awesome selves. It's also associated with happiness, and I can't argue with that.
People are always asking me for the ultimate mac and cheese recipe, but I'm much too greedy for that. I want all the mac and cheese recipes. So today, I'm sharing my 13 recipes for gooey cheesy pasta with lots of good bits and bobs added for extra awesomeness. I'm sure you'll find something you love.
Some of these recipes are quite old, so the photos don't do them justice. But I assure you, I still make all of them regularly, and they taste amazing.
Sweet Potato Mac & Cheese - This one's got sweet potato puree and feta cheese. I like serving it in individual ramekins or pie dishes. It's not as ridiculously cheesy as some other recipes, so maybe we can pretend it's healthy.
Spicy Bacon Mac & Cheese - This one is loaded up with spicy chili peppers and of course, plenty of salty bacon. It's also got ridiculous amounts of cheese.
Mac & Cheese Cups - Party-size mac bites with a buttery cracker crumb crust. I think this recipe was intended for kids, but I think it's delicious.
Buffalo Chicken Mac & Cheese - This is possibly my most epic mac and cheese recipe with four different kinds of cheese along with chicken and spicy buffalo sauce. It makes enough to feed a crowd, but you might not want to share.
BBQ Pulled Pork Stovetop Mac & Cheese - This one doesn't need to go in the oven, and it's totally cool to add store bought pulled pork, or better yet, kalua pig if you can get it. My husband likes extra barbecue sauce on his.
Easy Garlic Mac & Cheese - Made with a no-cook sauce, this one uses eggs and evaporated milk to create a cheesy casserole in the oven. It's much less work than making a roux.
Potato & Pancetta Mac & Cheese - We're cooking potatoes right along with our pasta in this rustic recipe with pancetta lardons and thyme. The sauce is simply cheese and cream, and the whole things comes together in the oven. It's hearty and warming. It's a perfect deep winter mac.
Mexican Mac & Cheese - We're adding in sweet corn, seasoned chicken, and chilies to make this mac hot and spicy. There's a bit going on, so it's a meal all on its own.
Cheez-Its Mac & Cheese - Add some extra junk food to your mac by topping it with crushed Cheez-Its instead of bread crumbs. It's freakin' awesome.
Spinach Alfredo Mac & Cheese - Use your favorite jarred alfredo sauce along with frozen spinach and cottage cheese for a calzone-esque mac. Bonus points for using greens.
Chorizo Mac & Cheese - In case you were wondering if chorizo could make anything better, I'm here to say, it definitely works on mac and cheese. This one's a bit spicy and totally irresistible.
Spam Mac & Cheese - For some reason, this recipe is wildly popular. Don't be afraid of meat in a can. Crisp it up in a skillet before stirring into your mac for so much salty goodness.
Cornbread-Topped Chili Mac - I supposed it's debatable if this is really mac and cheese, but it is really delicious, and I want you to eat it. It's also super easy to make, so get into it.
