4ounces (1 stick) unsalted butter, cold, cut into chunks
4ounces goat cheese
2 green onions, chopped
1-3/4cup buttermilk

Preheat oven to 425 F (220 C) and line one or two baking sheets with parchment paper or a silicone baking mat. If you only have one small baking sheet, you can make these in two batches.
If you haven't cooked your bacon already, do that now. However you like to cook bacon is great. Get it chopped into pieces to get folded into your biscuit dough.
In a large mixing bowl, sift together flour, baking powder, baking soda, and salt. Add your pieces of cold butter, and use your clean hands to smash and smoosh the butter and flour together until combined. You'll have a sort of sandy mixture.
Add in the cooked bacon, crumble in the goat cheese, and toss the green onions into the bowl as well. Fold all this evenly throughout your buttery flour.
Finally, stir in the buttermilk until combined. Since these are drop biscuits, this will be wetter than a typical biscuit dough.
Using a quarter cup measure or a large scoop, plop 12-15 mounds of dough onto your waiting baking sheets. Bake for approximately 15 minutes or until the tops of the biscuits just show a hint of golden brown action.
