Baked Sweet Potato Brulee is the easiest sweet treat that you probably never even thought about. If you never thought you’d eat a vegetable for dessert, think again.
For a while there, a lot of us had the rare opportunity to slow down. We stayed in, we worked less, and we discovered the pleasures of treating ourselves to really lovely food. We were scared, but also in a strange way, we had a new kind of freedom. We traded that time we used to spend in our cars for time at the stove getting creative with ingredients that were available.
I know that wasn’t everyone’s experience, and I’d like to express my gratitude for all of those people who sprang into action while I stayed hidden in my home.
But now that I’m back to work, I feel like those relaxed moments in the kitchen have disintegrated into memory. But my desire for truly lovely food has definitely not gone away.
This Baked Sweet Potato Brulee is my answer to truly lovely food that requires practically no work. Nature has done all the work for us by creating this nearly perfect food. It just so happens that when you top a tender baked sweet potato with brown sugar and spices, then pop it under the broiler for a minute or two to caramelize, you create some magic.
Dessert of some sort is a must at my house. Often it’s just a store-bought bit of snack cake, but this takes hardly more effort than opening up a package, so why would you settle for anything less? It’s sweet and smooth, but also a little bit crunchy. I love it.
How to make Baked Sweet Potato Brulee
Like I said, this is so simple. It hardly needs a recipe at all, but there is a recipe card below with all the details. Basically, just stab some sweet potatoes with a fork a few times. You’ll need one per person. Put them on a baking sheet and bake them in the oven until they’re totally tender. A sharp knife should slide in easily. You could even do this part a little bit ahead of time.
When you’re ready to eat them, slice open each baked sweet potato lengthwise, and give it a bit of a squeeze from each end to open it up. Pour in some melted butter. You can use your fork to loosen the flesh of the sweet potato a bit and mix it in if you like. Then sprinkle over your brown sugar and spice mixture, and pop it back in the oven under the broiler or use your kitchen torch to get the sugar a little bit bubbly. Keep a close eye on it. You want it crackly and caramelised, not black and bitter.
Then just let it cool for a few minutes so you don’t burn your face off and dig right in.

Baked Sweet Potato Brulee
A baked sweet potato gets topped with brown sugar and spices then put under the broiler to form a sweet, crunchy crust. It’s the world’s easiest dessert.

- 2 medium sweet potatoes
- 3 tablespoons melted butter
- 3 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon cayenne pepper
- Preheat your oven to 400F (200C) and line a baking sheet with foil.
- Prick your sweet potatoes a few times with a fork, place them on the baking sheet, and bake for an hour or until your sweet potatoes are soft all the way through. Test by piercing with a sharp knife. Cooking time will vary depending on the size of your sweet potato, but you want them nice and soft.
- In a small dish, mix together the brown sugar and spices.
- After your sweet potatoes have cooled enough to touch, slice them open lengthwise, and push together the ends a bit to squeeze them open.
- Pour half the melted butter over the squished flesh of each of your sweet potatoes. Sprinkle the sugar and spice mixture over the top.
- Crank up your broiler and put your sweet potatoes back in the oven. Allow them to cook for about 3-5 minutes, but don’t go too far. You want the sugar to be bubbly and brown, but not, you know, on fire. You could also use a kitchen torch if you have one.
- Give it a few minutes to cool, then grab a fork and dig in.
