Ingredients
Scale
2 medium sweet potatoes
3 tablespoons melted butter
3 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon cayenne pepper
Instructions
Preheat your oven to 400F (200C) and line a baking sheet with foil.
Prick your sweet potatoes a few times with a fork, place them on the baking sheet, and bake for an hour or until your sweet potatoes are soft all the way through. Test by piercing with a sharp knife. Cooking time will vary depending on the size of your sweet potato, but you want them nice and soft.
In a small dish, mix together the brown sugar and spices.
After your sweet potatoes have cooled enough to touch, slice them open lengthwise, and push together the ends a bit to squeeze them open.
Pour half the melted butter over the squished flesh of each of your sweet potatoes. Sprinkle the sugar and spice mixture over the top.
Crank up your broiler and put your sweet potatoes back in the oven. Allow them to cook for about 3-5 minutes, but don't go too far. You want the sugar to be bubbly and brown, but not, you know, on fire. You could also use a kitchen torch if you have one.
Give it a few minutes to cool, then grab a fork and dig in.
