I eat dessert every day. There are lots of people, probably including my doctor, who would say I shouldn't be doing this. For good or ill, I'm not listening to them. A sweet treat at the end of the day brings me so much joy, and with all that's going on in the world, a few moments of joy every day seem absolutely crucial. There are worse things to be addicted to than sugar.
Some will argue that I'll live a longer healthier life if I quit this habit, but I just can't see myself at the end of my life wishing I'd eaten less cake. Of course, I won't know until I get there, but for right now, I'm going to continue to allow myself a bit of pleasure wherever I can find it. Let's all just do a little bit more of what makes us feel good if it's not hurting anyone.
What makes this Biscoff Mug Cake so awesome?
This Biscoff Mug Cake can be made with ingredients you likely have lying around your house plus some delicious cinnamon-flavored Biscoff spread. Maybe you bought a jar and you can't figure out what to do with it other than eat it with a spoon (a totally respectable option). Now you can use the microwave to make yourself a little individual sponge cake in just a few minutes. How awesome is that?
This is not a gourmet dessert. It's not perfectly light and fluffy like a real cake would be. It's more of a steamed sponge situation. Yes, it's a bit dense and heavy, but that's totally awesome sometimes. I like to top mine with a scoop of vanilla ice cream while the cake is still warm and let it melt into the cake. When dinner is over and you realize you don't have dessert, this is a totally awesome way to make something sweet and tasty in no time.
Make it magical
There's this idea about kitchen witchcraft that everything needs to be pure and whole and old school. You have to cook in a cast iron pot and only use ingredients grown in your own garden. You need to collect water from a stream or only stir with a wooden spoon. I disagree. Witchcraft is about the power of intention, not about the supposed purity of tools and materials. You craft your spells in a way that makes you feel powerful, and if using storebought spreads to get your cinnamon energy and the microwave as your element of fire works for you, then let it be magical. Your spell is what you make it. It's not about what you cook but about how you cook it. And if you do it with intention, then it's witchcraft. At least, that's what I believe.

- Biscoff spread- or other spiced cookie butter
- Vegetable oil - anything with a neutral flavor
- Milk - whatever you have
- Egg
- Sugar
- Golden syrup - or light corn syrup, or even honey or maple syrup if that's what you've got
- Self-rising flour
- Vanilla extract
- Ground cinnamon
- Optional toppings - vanilla ice cream, Lotus Biscoff biscuits
Tips for making this Biscoff Mug Cake
You're working with ingredients in very small quantities here, so be sure to actually measure. You also want to make sure you're thoroughly and smoothly combining your ingredients, so if you have a small whisk that will fit inside your mug, I recommend using it. A fork will do if you don't.
You're going to mix this right in your mug. Start by combining the Biscoff, oil, and milk until smooth, then whisk in the egg before adding the rest of the ingredients. Make sure everything is well mixed in your mug. You could crumble some Biscoff biscuits on top as well if you have them.
Place your mug on a plate to catch any drips, just in case. This will puff up but then sink back down once the heat is off, so depending on the size of your mug, it could get messy. You'll start with about 2 minutes, but the time will vary based on the power of your microwave and the size of your mug. It will be puffed up but probably still a bit sticky. Once it looks basically cooked through, you're good to go.
Scoop on some ice cream, some extra biscoff spread, or add some more crushed biscuits if you like. Or go for all three. It's your dessert.

Ingredients
- 3 tablespoons Biscoff spread
- 1 tablespoon vegetable oil
- 1 tablespoon milk
- 1 egg
- 2 tablespoons sugar
- 1 tablespoon golden syrup, light corn syrup, or maple syrup
- 3 tablespoons self-rising flour
- ¼ teaspoon vanilla extract
- ¼ teaspoon ground cinnamon

Instructions
- In a microwave safe mug, mix together Biscoff, vegetable oil, and milk until smooth. Next mix in the egg until combined.
- Add remaining ingredients and whisk or stir with a form until you have a smooth batter.
- Place your mug on a microwave safe plate in case of any overflow. Microwave for 1-½ to 2 minutes. Continue to cook about 20 seconds at a time if needed until the cake is risen and firm.
- Top with vanilla ice cream and crumbled Biscoff biscuits if desired. Serve warm.
Notes
If you plan to make more than one cake, I recommend microwaving them one at a time.
