Do you prefer pancakes, waffle or French toast? I have to rotate through all three because basically, I'm a sweet breakfast fiend and have been since childhood. Of course, back in the 80's it was just butter and fake maple flavored syrup. We definitely couldn't afford the real stuff. When we wanted to splash out, my mom would by boysenberry syrup. That was a fancy as we got.
Over here in the UK, what was just simply breakfast is a sugar dessert extravaganza. You can get pancakes and waffles loaded up with a bajillion sugary toppings, every flavor of ice cream, and just piles upon piles of whipped cream. French toast is another matter. They put ketchup on it. Don't get me started. There are so many options for waffle toppings, it can be overwhelming. But if Biscoff is a choice, I'll go for that every time.
What makes Biscoff Waffles so awesome?
These aren't just waffles topped with Biscoff. They also have this sweet, cinnamony spread baked right in. They're perfectly cozy and less sweet than syrup or honey. The waffles are light and crispy on the outside and fluffy on the inside. They give you that perfect crunch and the pockets hold butter and melted Biscoff spread perfectly.
I still think waffles count as breakfast, so you could serve these with some crispy bacon or juicy sausages to start of an awesome weekend morning. If you wanted to take this concoction in more of a dessert direction, scoop some vanilla icea cream onto your warm waffles and add whipped cream. Dust the whole thing with ground cinnamon, and you've got something totally indulgent.

- Sugar - granulated or caster sugar
- Salt
- Baking powder
- Milk
- Eggs
- Butter - melted and cooled
- Biscoff spread - or your favorite spiced cookie butter
Tips for making this Biscoff Waffles
This is a pretty basic recipe. You'll mix your dry ingredients in one bowl, the wet ingredients in another, including your melted Biscoff, then bring them together quickly and gently. Make sure your waffle iron is fully heated before you begin baking your waffles. Each machine is different. Mind makes perfectly crisp waffles in five minutes. Your timing may vary.
These are best served straight away for maximum crispiness. If you do want to serve them all at once, place them on a wire rack in a warm oven to keep them warm. The rack will allow air to circulate so the waffles don't go soggy underneath.
Serve with plenty of good butter, some melted Biscoff, and whatever else your heart desires.

Ingredients
- 1 cup all-purpose or plain flour
- 2 tablespoons sugar
- ½ teaspoon salt
- 1-½ teaspoons baking powder
- ¾ cup milk
- 1 egg
- 2-½ tablespoons unsalted butter, melted
- ½ teaspoon vanilla extract
- 2 tablespoons Biscoff spread, melted
Instructions
- Plug in your waffle iron and preheat it to high.
- In a large mixing bowl, add the flour, sugar, salt, and baking powder and whisk gently to combine.
- In another bowl or a measuring jug, add milk, egg, melted butter, vanilla, and melted Biscoff. Whisk to combine.
- Add the wet ingredients to the dry ingredients and gently and quickly fold them together. A few little lumps is fine.
- Scoop about ½ cup of batter onto your hot waffle iron, and bake for about 5 minutes. Each machine is a little bit different, so use the amount of batter and timing that you know works. Your waffles should be golden brown and crisp on the outside.
- Serve immediately or keep warm on a wire rack in a warm oven. Serve with butter, Biscoff spread, and whatever else your heart desires.
