    These Black Pepper Bacon Waffles are the perfect combination of savoury and sweet with the fiery warmth of freshly cracked black pepper. Breakfast is about to get a lot more awesome.

    The Principle of Polarity reminds us that all things have their opposite but they are identical in nature. So when we blend seemlingly opposing flavors in our kitchen creations, we often create something deeply delicious. Creating great flavors is all about finding the balance of savoury, sweet, sour and spicy. This allows us to blend flavors like a painter blends color, bringing nuance to every dish.

    And of course, this alchemy of flavor also creates and alchemy of energy, making a dish both earthy and fiery, for example. Rarely do we need just one frequency to create our desires. Often a beautiful harmony is vibrations is required for us to call in our manifestations. It all works together to make us more powerful.

    What makes Black Pepper Bacon Waffles so awesome?

    These Blac Pepper Bacon Waffles shift the balance of this breakfast classic. The nuance of warmth from the black pepper brings out the deep sweetness of maple syrup. The crunchy bits of savoury smoked bacon provided a welcome contrat to the fluffy waffle. There's nothng revlutionary here. We're just playing with the balance of flavors and creating flavors that provide a bit of intrigue and so much satisfaction.

    I know that waffles are not the easiest thing in the world to make, and unless you have multiple waffle makers, you're sort of forced to hang out in the kitchen and make them one at a time. So use that limitation to your advantage by gathering everyone in the kitchen with you. Maybe put them to work helping with another aspect of the meal, or simply let them chat away with you while you wait for waffles to bake. It allows space for deep conversation and deep deliciousness.

    Ingredients

    Here's everything you'll need to make these waffles. The full details are in the recipe card below.

    • Bacon - the smoked, streaky variety, pepper bacon would be awesome if you can get it
    • Black pepper - freshly cracked is awesome, but use whatever works best for you
    • Flour - all-purpose or plain
    • Baking powder
    • Baking soda - aka bicarbonate of soda
    • Salt
    • Brown sugar
    • Eggs
    • Neutral flavored oil - such as canola, vegetable or sunflower oil
    • Vanilla extract
    • Buttermilk - or kefir

    In addition to a couple of mixing containers, a whisk, and a spatula, you'll also obviously need a waffle iron for this. Each one is a bit different, so bake your waffles according to how your machine works.

    Tips for making Black Pepper Bacon Waffles

    The easiest way to cook your bacon is to bake it in the oven. It takes a bit longer, but it's passive time that you can use to get on with other stuff. You'll want to press some freshly cracked pepper into your bacon strips, lay them onto a baking sheet, and bake until crisp. If you've already bought peppered bacon, you obviously don't need to add more. Once your bacon is cooled, chop it into 1-inch pieces. You can do all this well ahead of time, days before. Just keep your cooked bacon in the fridge until you're ready to make your waffles.

    Making the waffles is a classic muffin method of mixing dry and wet ingredients separately, the mixing them together quickly. Fold in your bacon and get to waffling. Make sure your waffle maker is fully preheated before you add the batter for the first waffle.

    These are best served immediately but can be kept warm in a low oven.

    What if I don't like black pepper?

    These could also be awesome with cayenne, but that's a much stronger flavor, so use half as much.

    Ingredients

    Scale
    • 5 slices streaky bacon

    • 1-¼ teaspoons freshly cracked black pepper, divided

    • 1-½ cups plain flour

    • 1-½ teaspoons baking powder

    • ½ teaspoon baking soda

    • ½ teaspoon salt

    • 2 tablespoons brown sugar

    • 2 eggs

    • ⅓ cup vegetable oil

    • 1 teaspoon vanilla extract

    • 1-¼ cups buttermilk

    Instructions

    1. To make the bacon, preheat your oven to 375F (190C) and lay your bacon slices out on a baking sheet in a single layer. Grind about 1 teaspoon of pepper generously over your bacon and bake until crispy, about 10-15 minutes. Just keep an eye on it until it's as done as you like. Remove it from the oven and transfer it to a paper towel-lined plate to cool.
    2. Preheat your waffle iron while you get on with your waffle batter.
    3. In a large mixing bowl, add your flour, baking powder, baking soda, salt, ¼ teaspoon cracked black pepper, and brown sugar. Whisk this gently to evenly combine your ingredents.
    4. In another mixing bowl or a measuring jug, add eggs, vegetable oil, vanilla, and buttermilk. Whisk to combine.
    5. Add your wet ingredients to your dry ingredients and fold gently until everything is just combined. Don't panic about any minor lumps.
    6. Chop your cooled bacon into bite-size pieces and add them to your waffle batter. Fold the bacon through.
    7. Cook your waffles in your waffle iron according to what works best for your machine. You want them to be brown on the outside and light and fluffy on the inside. My machine took about five minutes per waffle.
    8. Serve piping hot with your favorite toppings. May I suggest salted butter and maple syrup.
