    Blue Cheese Burger with text

Blue cheese is like witchcraft. Hear me out. Blue cheese is basically moldy, though all cheese is sort of made from spoiled milk. But this one takes it even further by introducing mold on purpose and actually encouraging it to grow as the cheese ages. By all logic, it should be rotten, but somehow, it's delicious. Where did this idea come from? Who was the brave person who first tasted the moldy cheese and decided that instead of being scary, it was actually good.

Similarly, witchcraft has long been accepted by many as something bad, dangerous, or even evil. People shy away from it because they fear to consequences. But in certain circumstances, with certain applications, witchcraft and magic can be beautiful, empowering, and even miraculous. Witches aren't afraid to explore the borders between what is "good and bad." The take things to the edge, push boundaries, and unlock new realms of possibility. Just like blue cheese.

What makes this Blue Cheese Burger so awesome?

What I love about this blue cheese burger is that by cutting the blue cheese with cream cheese, it mellows it out a little bit, and it doesn't overwhelm the rest of the burger experience. So you get the sharp, pungent flavor a blue cheese, but it's subtle rather than punching you in the face.

And since all the blue cheese flavor is coming from the spread, you can also just leave it off for people who aren't into that and offer them some less aggressive cheese. But if you want to make your backyard barbecue a little more interesting, having blue cheese burgers as an option is definitely a bold and delicious choice.

    Magical Properties of Blue Cheese

All cheeses are a symbol of transformation as the milk turns from liquid to solid and somehow becomes even more delicious. It's a reminder that we can experience transformation, even decay, and come out better on the other side. Blue cheese, with its moldy veins, are an especially poignant reminder that something others might see as rotten or unwanted can be transmuted into something deeply desirable over time. With tender loving care, the things that try to do you in can be transmuted into your unique superpower. So add some blue cheese to your spell when you're feeling like you've been knocked down by life or you haven't been at your best for a while. Let it remind you that the time you spend in your personal cave will yield amazing results.

Tips for making a Blue Cheese Burger

Okay, this is really all about the blue cheese spread. Everything else is just making your favorite burgers in your favorite way. If you want to learn more about how I make my totally awesome homemade burger patties, check out out here: Basic Burgers

Really all you have to do is smash together some crumbled blue cheese with some cream cheese. You can do this in a bowl with a fork or with an electric mixer. Whatever makes you happy. If you have this mixture closer to room temperature when your burgers are ready to be topped and eaten, you'll find it easier to spread.

As for additional toppins, go with lettuce, onion, and tomato, as you like. I think caramelized onion would probably be nice. You could also add bacon if you like. I think mustard is a great accompaniment to this burger. Use your favorite variety.

What kind of blue cheese should I use?

There are lots of regional varieties of blue cheese. It doesn't really matter what you choose as long as its something you enjoy eating. If it's too strong, you're not going to enjoy your burger, so make sure you choose a brand or variety that you know you'd eat on its own.
