This blue cheese fondue is made with your favorite pungent cheese. You could go with Gorgonzola, Stilton, Roquefort, whatever you can get your hands on. If you're making this for a party, maybe get yourself down to the local cheesemonger and pick something made with love in your community. Or buy the cheapest blue cheese you can find if that's what you need to do. It will still be awesome.
This recipe has very few ingredients. I made mine on the stove and then just served it warm in a bowl, but if you have a fondue pot, this would be a great time to dust it off. You could also make a big batch for a party and put it in your slow cooker to keep it warm. Serve it with crusty bread, maybe toasted with garlic butter and Parmesan cheese.
