Brie en Croute is basically French for cheese wrapped in bread, and I can't think of anything more awesome. This one features fig jam and thyme, but the flavor combinations are endless.

  • 1 wheel of brie
  • 1 sheet puff pastry
  • 1 egg, beaten
  • 3 tablespoons fig jam or other topping
  • 1/2 teaspoon fresh thyme or other herbs


  1. Preheat your oven 375 F (190 C) and line a baking sheet with parchment or a silicone baking sheet 
  2. Spread out your sheet of puff pastry and place the unwrapped wheel of cheese on top. 
  3. Spoon your jam over the top, and sprinkle on herbs (and nuts if you're using them), then fold the puff pastry over the cheese to completely encase it in the pastry. Trim extra pastry and pinch together any seams. 
  4. If you want to add any decorations with your excess puff pastry, add those now, then brush the whole things with your beaten egg. Be sure you don't create a pool of egg around the bottom though, as this will "glue" your pastry to the baking sheet.
  5. Bake for about 25 minutes or until puffed and golden brown. Let the whole thing cool for 5-10 minutes before cutting into it. 
  6. Serve hot with crackers or crusty bread.


This is best served fresh, so consider how many people you want to serve when selecting the size of your wheel of brie.
