Tips for making Buffalo Chicken Enchiladas
These is a pretty straight forward recipe. You'll mix up your filling of chicken, cream cheese, cheddar, jalapenos, and buffalo sauce. Then fill 6 tortillas and wedge them into a baking dish. Then you'll combine more buffalo sauce with some cream and melted butter for your sauce to pour over the top. On top of that goes even more cheddar cheese before it gets popped in the oven.
Once everything is hot and gooey, you can sprinkle over some crumbled blue cheese. If you want it even spicier, add a dash of hot sauce. If you need more of a cooling effect, drizzle on some ranch dressing. Finally, brighten everything up with some chopped fresh cilantro or green onion.

Ingredients
- 2 cooked chicken breasts - chopped or shredded
- 4 ounces cream cheese, softened
- 2 cups shredded cheddar cheese, divided
- 2 jalapenos, chopped fine
- 1 cup Buffalo sauce, divided
- 3 tablespoons (1.5 ounces) unsalted butter, melted
- 3 tablespoons heavy or double cream
- 6 flour tortillas
- ¼ cup crumbled blue cheese
- Fresh cilantro or green onion, chopped
Instructions
- Preheat your oven to 400 F (200 C) and spray a casserole dish with non-stick spray.
- In a large mixing bowl, and the chopped chicken, cream cheese, 1-½ cups shredded cheddar, chopped jalapenos, and ½ cup Buffalo sauce. Stir and smoosh togehter to combine.
- Divide your chicken mixture between your 6 tortillas, spooning the filling down the middle. Roll up each tortilla and place it seam-side down in your casserole dish.
- In another mixing bowl, combine your remaining ½ cup Buffalo sauce with the melted butter and cream. Whisk to combine, then pour this mixture over your filled tortillas, spreading evenly. Sprinkle over the remaining cheddar cheese.
- Bake your enchiladas for 15 minutes, or until the cheese is melted. Let it cool for about 10 minutes, then sprinkle over the blue cheese and fresh cilantro or green onion. Serve hot.
