    This Buffalo Chicken Grilled Cheese is gonna blow your mind. With a hit of spice and plenty of gooey cheese, this chicken sandwich is far from boring. In fact, it's totally awesome.

    For the most part, I like a nice, calm, quiet life. I like routine and ritual, meditation and mindfulness. My spiritual work is all about cultivating peace and ease. But every now and then, I like a bit of spice thrown into the mix. Just enough spontaneity to keep things exciting.

Whether that's hopping on a plane or just checking out a random historic site in my own hometown, I love to go places I've never been and see things I've never seen. Then I want to go back home and sink into my deep peace once again.

    What makes Buffalo Chicken Grilled Cheese so awesome?

    This Buffalo Chicken Grilled Cheese takes something very ordinary and comforting and adds a bit of spice and excitement. Chicken? Yeah, you know that guy. Grilled Cheese? You've been best friends since kindergarten. Buffalo sauce? Hey, who's that kid? Where did he come from? Tell me more.

    This sandwich has the classic crunchy bread and gooey cheese, but then we mix up our pre-cooked chicken with cream cheese, blue cheese, ranch dressing, and of course, Buffalo sauce and squish it all together for a super flavorful and indulgent filling. Each bite is a delicious punch of tastes and textures. You'll be swooning.

    Make it magical

    When you add spice to your spells, it has much the same effect as when you add it to your food. Things like cayenne, paprika, chili flakes, or even a dash of hot sauce bring a huge punch of energy to your spells, making them work faster. These ingredients can blast obstacles out of your way and turn your attraction power from a fridge magnet to one of those electromagnetic cranes they use to move cars in junkyards.

    But again, like adding spice to your food, a little bit can go a long way and too much can bring unintended consequences. Be discerning in your use of these ingredients in your spell work. Have patience and trust that the Universe knows what its doing.

    Tips for making Buffalo Chicken Grilled Cheese

    We're gonna start by smooshing a bunch of stuff together in a mixing bowl. Some ranch dressing, cream cheese, blue cheese, and shredded cheddar get all smashed and stirred until it's relatively incorporated. Then add to that your chopped or shredded cooked chicken, along with your Buffalo sauce. Start with a little, then add it in gradually until you've reached your desired heat level.

    Then we just spread that on some bread, make a sandwich, butter the outside, and grill it up in a hot skillet. It's as simple as that. You could serve this with soup or a crisp salad. You could add some chopped celery to the mix if you're into that. Or just eat this sandwich on its own, licking your fingers when it was done because you want every last crumb.

    What's the best type of cheese to use for this grilled cheese?

    Because it's Buffalo, you obviously want to have some crumbled blue cheese. I've used shredded cheddar here as well, because that's easiest to get in Scotland. But shredded mozzarella or Monterey Jack cheese would also be good. Anything that's going to melt easily.

    Ingredients

    Units Scale
    • 1 tablespoon ranch dressing
    • 3 tablespoons cream cheese
    • 2 tablespoons crumbled blue cheese
    • 2 tablespoons shredded cheddar cheese
    • ½ cup shredded cooked chicken
    • 2 to 4 tablespoons buffalo sauce (depending on how spicy you like it)
    • 4 slices of bread
    • 2 tablespoons softened butter

    Instructions

    1. Preheat a non-stick skillet over medium heat.
    2. In a small bowl, use a fork to smash together the ranch dressing, cream cheese, blue cheese, and shredded cheddar. Just mix and mash til it's all incorporated.
    3. Next, add your shredded chicken and buffalo sauce and stir this in until combined.
    4. Lay out your four slices of bread and evenly divide your cheese mixture onto two slices, smearing it gently across the bread. You know how to make a sandwich.
    5. Lightly butter the outside of the top of each sandwich and place them, butter side down, into your hot skillet. While the first side is cooking, butter the top of each sandwich so it's ready to flip.
    6. Cook for three to five minutes on each side depending on how brown and crunchy you like your grilled cheese.
    7. Serve hot with lots of napkins.
