    Buffalo Chicken Pasta Bake

    This Buffalo Chicken Pasta Bake is cheesy and creamy and oh so spicy with a healthy dose of hot sauce and plenty of juicy chicken. Dinner is gonna be awesome.

    Have you ever explored your digestion in Human Design? Mine is closed taste, and it totally vindicated me as a picky eater. It says I don't have to try things to know whether or not I'll like them. And that's true of not just food, but also of my taste in so many other things. I can hear the first few bars of a song or watch the trailer for a movie and almost always know whether or not it's for me.

    Another aspect of closed taste is eating the same thing over and over again. I definitely fall in love with certain flavors for a while and just can't get enough of them. The combination of buffalo sauce and blue cheese is one of my obsessions. I just can't seem to let go of the tangy heat and the funky cheese. I want it all the time.

    What makes this Buffalo Chicken Pasta Bake so awesome?

    This Buffalo Chicken Pasta Bake is feeding my obsession for sure. It's a super easy weeknight dinner that's so satisfying. Made with pre-cooked chicken and jarred alfredo sauce it's so easy to get on the table. And once it's there, it's impossible to stop eating.

    With plenty of blue cheese mixed through the sauce plus a healthy dose of your favorite hot sauce, it's got the perfect balance of spicy and creamy. There's also plenty of shredded mozzzarella mixed in to make it extra gooey. This dish is going to becomea family favorite. I know I want it all the time.

    Ingredients

    Here's everything you'll need to make this dish. The full details are in the recipe card below.

    • Short pasta - such as penne
    • Chicken - Pre-cooked. Use leftovers, store bought, or prep ahead by cooking some frozen chicken breasts.
    • Jarred white sauce - Use alfredo sauce if you can get it or white lasagna sauce in the UK.
    • Hot sauce - Use your favorite. I like Cholula.
    • Blue cheese - I tend to use whatever is cheapest, but use your favorite variety.
    • Ranch seasoning - You could substitute some ranch dressing if you can't get the powdered seasoning.
    • Shredded mozzarella
    • Green onions

    Tips for making Buffalo Chicken Pasta Bake

    I love how simple you can make this recipe. You may notice that the sides of my casserole dish are a bit messy in the photos. That's because I mixed all the ingredients for the sauce right in the casserole dish itself rather than creating more clean up by mixing them in a bowl first.

    You don't have to cook anything for the sauce, so while your pasta is cooking, stir together all your sauce ingredients. Then toss the cooked pasta and the chopped chicken with the sauce. Then top the whole thing with more cheese and pop it in the oven. Bake the whole thing until it's bubbly and gooey, then scatter on some chopped green onion. The hardest part is waiting for it to cool before you dig in.

    Ingredients

    Scale
    • 10 ounces (300 grams) uncooked penne or other short pasta
    • 2 cups chopped cooked chicken
    • 1 jar (15 ounces/490 grams) alfredo or white sauce
    • ½ cup hot sauce
    • ⅓ cup crumbled blue cheese
    • 2 tablespoons ranch seasoning
    • 2 cups shredded mozzarella, divided
    • 2 green onions, chopped, green parts only

    Instructions

    1. Preheat your oven to 375 F (190 C) and put a large pot of water on to boil.
    2. When your water is boiling, add a fat pinch of salt and cook your pasta, stirring occasionally, for one minute less than the packet instructions. Drain pasta.
    3. While the pasta is cooking, add your chopped chicken, alfredo sauce, hot sauce, blue cheese, and 1 cup of the shredded mozzarella to your casserole dish. Stir to combine. 
    4. When the pasta is drained, add it to the casserole dish, and stir until well incorporated. Spread the pasta evenly, and top with remaining mozzarella.
    5. Bake for 15 minutes until the cheese is melted and the sauce is bubbly. Sprinkle with green onions and let it cool for at least 10 minutes before serving hot.
