- Potatoes - big starchy baking potatoes are best here
- Oil - whatever you have on hand
- Salt
- Chicken - pre-cooked and chopped or shredded
- Cheddar cheese - or your favorite melty cheese
- Sour cream - or creme fraiche or plain yogurt
- Green onions - chopped
- Blue cheese - crumbled
You won't need any special equipment for this recipe. Just a baking sheet, a mixing bowl, and a spoon. And of course, you'll need a knife and cutting board. I don't even really use measuring cups for this. This is a recipe where it's totally fine to eyeball it.
Tips for making Buffalo Chicken Twice Baked Potatoes
I know that many of you are fond of microwaving potatoes rather than baking them, but I assure you that cooking your potatoes in the oven, or even the air fryer (which is just a small convection oven) is going to give you a much better result as your potato will cook more evenly and be much more fluffy and delicious.
Since you're going to be eating the skin of the potato here, make sure it's scrubbed clean. To give it some flavor, rub it with oil and season it with salt before baking your potatoes for 45 minutes to an hour depending on size. Don't forget to poke holes in them with a fork first. You can do this bit well ahead of time if you like.
When you're ready to mix in your other ingredients, carefully cut the potatoes in half and scoop out most of the flesh of the potato, leaving a bit stuck to the skin so it will hold its shape. Add this to a mixing bowl and give it a rough smash. We're not making mashed potatoes, just breaking up the flesh so it will incorporate with the other ingredinets more easily. Then you just stir in the rest of your ingredients, scoop that mixture back into your potato skins, and pop it back into the oven until everything is hot and melty. So easy. So good.

Ingredients

2 medium baking potatoes

1 tablespoon oil

½ teaspoon salt

2 pre-cooked boneless skinless chicken breasts, chopped or shredded

½ cup shredded cheddar cheese

¼ cup sour cream

2 green onions, chopped

⅓ cup buffalo sauce
- 2 ounces blue cheese, crumbled

Salt and pepper, to taste
Instructions
- Scrub your potatoes and pat them dry. Poke the potatoes several times with a fork. Rub the potatoes with olive oil and salt. Bake in the oven at 350 F (175 C) for at 45 minutes or until a sharp knife can easily pierce through the thickest part of the potato. Time varies based on the size and shape of your potatoes.
- Allow the potatoes to cool slightly, then slice them in half lengthwise. Use a spoon to carefully scoop out the soft flesh of the potato without destroying the structural integrity of the potato skin.
- If you're doing this step well after your potatoes have baked, don't forget to turn your oven back on to 350 F/175 C.
- Put your potato flesh into a mixing bowl with the remaining ingredients except the blue cheese. Stir everything together and then carefully scoop the mixture back into your four potato skin shells. Sprinkle the blue cheese crumbles over the top of your potato halves.
- Carefully transfer your filled potatoes to a foil lined baking sheet. Put your potatoes back in the oven for about 10 minutes or until melty.
- Allow your potatoes to cool for about five minutes before digging in.
