This dish is hearty on its own, but if you want to round out the meal, serve it with a crisp green salad, roasted veggies, and some warm dinner rolls to soak up all that cheesy goodness.

- Potatoes - Starchy potatoes such as Russet or Maris Piper are good. Yukon Golds are always my favorite if you can get them.
- Olive oil - or your favorite cooking oil
- Salt and pepper
- Chicken - I go for boneless skinless chicken breast, but you can use your favorite part of the chicken
- Paprika - I like smoked
- Garlic granules - or powder
- Cheddar cheese - I like to go for something relatively strong in flavor here
- Bacon - pre-cooked and crispy, of the smoked and streaky variety
- Green onions
Tips for making Chicken & Loaded Potato Casserole
Prep the Potatoes – Preheat your oven to 400°F (200°C). Toss the diced potatoes with olive oil, salt, and pepper. Spread them in an even layer in a greased baking dish and bake for 40 minutes.
Add the Chicken – Chop up your chicken and toss it with olive oil and seasonings and spices. Let it sit in the fridge while the potatoes cook. Remove the dish from the oven and stir the potatoes. Layer the diced chicken on top and return to the oven for another 15 minutes until the chicken is cooked through.
Get Cheesy – Sprinkle on the shredded cheddar and mozzarella cheese, followed by the crumbled bacon. Pop it back in the oven for another 5-10 minutes until the cheese is fully melted and bubbly.
Garnish & Serve – Top with chopped green onions for a pop of freshness. Serve hot and enjoy!
You can definitely cook your bacon and chop your potatoes ahead of time. If you want to prep ahead even further, cook the potatoes and the chicken, then add the cheese and bacon when you reheat the dish. Leave the green onions until you're ready to serve.

Ingredients
- 5 medium starchy potatoes, peeled and chopped
- 4 tablespoons olive oil, divided
- 1 teaspoon salt, divided
- ½ teaspoon pepper, divided
- 3 boneless skinless chicken breasts, chopped
- ½ tablespoon smoked paprika
- ½ tablespoon garlic granules
- 1 cup shredded cheddar cheese
- 4 sliced bacon, cooked and chopped
- 2 green onions, chopped
Instructions
- Preheat your oven to 400 F (200 C) and grease a medium-sized casserole dish or baking dish.
- Add your chopped potatoes to the casserole dish, drizzle with 2 tablespoons olive oil, and sprinkle with ½ teaspoon salt and ¼ teaspoon pepper. Toss to coat in oil and seasoning, then spread the potatoes in a single layer and bake for 40 minutes.
- While the potatoes are cooking, add 2 tablespoons olive oil, remaining salt and pepper, paprika and garlic powder to a bowl and stir to combine. Add your chopped chicken and stir to coat in the oil and spices. Stash this in the fridge until your potatoes are cooked.
- When your 40 minutes is up, carefully remove the casserole dish from the oven and evenly scatter your chicken pieces on top. Put this back in the oven for 15 minutes or until the chicken is cooked through.
- Remove the dish from the oven again and scatter over the cheese and bacon and return to the oven for a further 5 minutes to melt the cheese.
- Scatter over your chopped green onions and serve hot.
