    Cooking can be such a beautiful way to connect with our direct ancestors. Scrambled eggs were the one thing that I can remember learning to cook from my mom. She was dedicated to her simple technique of stir stir stir stir stir stir stir. Those were her exact instructions. Even though she's been gone for almost 15 years, I can still hear her voice as we stood over the skillet making perfect, fluffy scrambled eggs.

    So many of us have food memories of our families, and as kitchen witches, we know it only requires of bit of intention and focused energy to change a family recipe into an ancestral connection spell. The next time you make something that reminds you of a lost loved one, give yourself a few moments to ask for them to be with you as you cook and eat. Let the dish be a channel for their energy.

    What makes these Chilli Scrambled Eggs so awesome?

    Chilli Scrambled Eggs are the perfect breakfast for spice fiends. Use whatever chillies you can get. Obviously, different varieties will have different levels of heat. I used red and green jalapenos which pack a punch but won't blow your head off. If you follow my mom's instructions, you'll have fluffy, creamy eggs with a bit of cheese and a mix of sauteed and fresh chillies for plenty of good flavor.

    I think eggs make a great meal any time of day, especially if you're cooking for just one person. Serve them on toasted sourdough or make your breakfast a bit more portable by wrapping them in a tortilla. Obviously, you can just slap them on a plate if you want a low carb option. This is an excellent meatless meal that's packed with protein and so much amazing flavor.

    Magical Properties of Chillies

    Chillies obviously carry powerful fire energy. They've been used in spells to clear energy, open new pathways, and keep away unwanted energy. Think of them as metaphysical dynamite. With their somewhat phallic shape, they're also tied to the planet Mars and male fertility. Hanging a chilli pepper around a man's neck can protect his virility from the evil eye, and burning chillies can clear effects of the evil eye as well.     • Eggs
    • Hot sauce - your favorite
    • Salt and pepper
    • Olive oil
    • Chillies - such as jalapenos or whatever is easiest for you to get where you live
    • Shredded cheese - such as cheddar, but use whatever you have on hand

    Tips for making Chilli Scrambled Eggs

    Making scrambled eggs is hardly rocket science, and yet lots of people do it really poorly. Anybody who's ever had eggs from a buffet knows just how bad it can be. But if you're patient and persistent, you can create something truly delicious.

    Start by chopping a chilli or two and sauteeing about half of that in some olive oil to soften. While that's cooking, mix your eggs with a bit of hot sauce, whisking them thoroughly to combine. Then pour your egg mixture over the sauteed chillies, reducing the heat to low.

    Here's where you'll need to stay focused. You want to keep your eggs constantly moving. Use a spatula to stir your eggs, continually lifting them off the bottom of the pan as they cook. As they start to firm up, sprinkle over your shredded cheese, stirring that in as well. Turn the heat off under your pan while the eggs still look wet. As Alton Brown says, if they're fully cooked in the pan, they're overcooked on the plate.

    Sprinkle over the remaining fresh chillies when you're ready to serve. You can put them on some toast or just eat them plain. Whatever makes you happy.

    Ingredients

    Scale
    • 1 tablespoon olive oil
    • 2 small chillies, such as jalapenos, chopped
    • 2 eggs
    • 1 tablespoon hot sauce
    • ½ teaspoon salt
    • ¼ teaspoon ground black pepper
    • 2 tablespoons shredded cheddar cheese

    Instructions

    1. Add your olive oil to a non-stick skillet over medium heat. Sautee half your chopped chillies for about 5 minutes to soften.
    2. In a mixing bowl, whisk together eggs, hot sauce, salt, and pepper to form a smooth mixture. 
    3. Reduce the heat to low and add your egg mixture to your skillet. Stir with a rubber spatula contantly for 3-5 minutes. When the eggs start to lose their liquid consistency, sprinkle in the shredded cheese. Keep stirring until the eggs are mostly set but still look a bit damp. Turn off the heat and stir a few more times.
    4. Serve hot with remaining chopped chillies.
