Mornings are an important time for magic in my practice. Focusing on aligning your energy as soon as you rise helps to set up your day to be more calm and centered. At least, that's been my experience. So I meditate and pull cards in the morning. I pour moon water into my first cup of tea. I give myself time to reflect on the stars, affirm my life, and dedicate myself to my intentions.
What I still don't do is eat a proper breakfast most days. Which is weird because I absolutely love breakfast foods, but I just don't generally have the energy to make breakfast most days. Which is why I love breakfast for dinner. It's delicious no matter what time of day you eat it.
What makes this Chorizo & Potato Breakfast Burrito so awesome?
This Chorizo & Potato Breakfast Burrito is absolutely delicious. The little bits of chorizo give a huge burst of flavor, while the potatoes provide a bit of crunch. I cook the eggs in the same pan as the chorizo was rendered in, so they take on that flavorful oil, not to mention a bit of an orange hue. Finally, you have to sprinkle on some spicy cheese such as cheddar with chilies or pepper jack. Wrap it all in a soft tortilla, and you're pretty much guaranteed to have a good day.
You could make the whole wrap ahead of time and stash it in the fridge for the night or the freezer for longer, then reheat in the morning if you're in a hurry. Or if you just want to prep a few things ahead, crisp up your chorizo, cook your potatoes, and grate your cheese when you do your meal prep. You can then scramble the eggs when you're ready to fill your burritos. One egg per person is fine here.
Make it magical
The humble potato can be used in spells for grounding, as well as for absorbing negative energy. Judika Illes mentions several potato spells in her book The Element Encyclopedia of 5000 Spells. One is for binding a lover to you and involves taking two potatoes, chopping them in half, then joining one half of each potato back together with honey, nails, and red twine. You then bury the potato in moonlight to bind that lover to you. Remember that binding spells can affect the will and energy of another person, so consider if you want to have this affect on another person without their consent.

Tips for making a Chorizo & Potato Breakfast Burrito
As with any burrito or wrap, we're taking disparate elements and bringing them together. I use frozen crispy potatoes here. Hash browns would also be suitable. Cook those in the oven until crispy while you get on with the rest of your ingredients.
My grocery store sells pre-chopped chorizo bits, and it saves me lots of time. Cook that in a skillet until the bits crisp up a bit and have released some of their oil. Remove that to a plate, and use the same skillet to scramble your eggs. Beat one egg per person with a dash of water and some salt and pepper, then add them to your pan over low heat. Stir the eggs constantly with a spatula to keep them light and fluffy. Turn the heat off while the eggs still look a tiny bit undercooked. They'll continue to set as the pan cools.
You'll also want to have some grated cheese. I like to use something with a bit of spice, so I went for cheddar with chilies.
How to fold your burrito
Once all your components are cooked, you can begin adding them to the center of a large tortilla and folding into burritos. Fold over one long edge, then the two short edges, then flip the whole thing over onto the final edge to seal it up. You can eat it just like this or crisp up your burritos in your skillet with a bit more oil if that sounds good to you.
If you want to add your favorite salsa or hot sauce, that would be awesome. Some cilantro or pickled jalapenos could also be tasty if you have them on hand. I'm always a fan of a dab of sour cream.

Ingredients
- 1 cup frozen crispy potatoes
- 130 grams (about ½ cup) chopped chorizo
- 4 eggs
- 1 tablespoon water
- Salt and pepper to taste
- ¼ cup shredded cheddar cheese with chilies or pepper jack
- 4 flour tortillas
Instructions
- Cook your frozen potatoes according to the packet instructions. If you want to season them with a bit of chili powder, that could only be awesome.
- Place a skillet over medium heat and add your chorizo. Let it cook, stirring occasionally, for about five minutes or until it's gone a bit crispy. Remove to a plate. Set aside.
- In a large mixing bowl, crack your eggs and add water, salt, and pepper. Whisk until incorporated, then add the eggs to the same skillet you cooked the chorizo in over low heat. Use a spatula to stir the eggs constantly, scraping them from the bottom of the pan as they cook. Keep them moving, and turn the heat off while they still look a bit undercooked. They'll continue to set as the pan cools.
- To assemble your burritos, add potatoes, chorizo, eggs, and cheese to the middle of each tortilla in a line, leaving space at the edge for folding. Fold one long edge over your filling, the fold in both short edges, then give the whole thing a flip to seal.
