Hi Renee!
I love your content and recipes. I have a question regarding the rosemary potato rolls. After I mix all the ingredients, the dough is very, very sticky and virtually impossible to knead. I added over 1/2 cup of flour the first time I made them and still, they were a sticky mess. They rose and tasted fine(my husband has eaten almost all of them in 24 hours!). the second time I made them, I used a new bag of flour and new yeast. I followed your directions to the "t". I got the same result. Any ideas?

They can be quite sticky. Baking them in the muffin pan means you don't need to have a stiff dough. However, they can sometimes be too sticky. The mashed potato can be an unpredictable variable when it comes to adding moisture. I'd say just keep adding flour until you have something managable. If you have a stand mixer, knead the dough with the machine rather than by hand, adding a spoonful of flour at a time until it's a soft and pliable dough. You definitely want it softer than most bread dough. I'll try and share on Instagram the next time I make them so you can see how I do it.
