I'm a bit obsessed with this Cream Cheese Pasta right now. It's another pasta dish that's way too delicious for how simple it is to make. It's almost emergy dinner levels of easy. As long as you have cream cheese in the fridge and pasta in the pantry, chances are high that you'll have everything you need to whip this up. It's savory and creamy and so satisfying. I like to make mine a bit spicy as well with plenty of crushed red pepper flakes and freshly ground black pepper.
But that's another thing about this recipe that's so awesome. It's definitely customizable. You can easily adjust the spices and seasonings to your liking. It's also simple enough that you can introduce other elements like grilled chicken or steamed veggies. Almost anything would work here. This is a great way to bulk out a meal using random leftovers in your fridge. Honestly, I've made this every time I've had a bit of extra cream cheese in my fridge for the past month. I love it.

- Pasta - I like penne, but any pasta you have on hand will work here.
- Cream cheese - I highly recommend going full fat for a richer pasta sauce.
- Parmesan cheese - or other similar Italian hard cheese
- Garlic-infused olive oil - This saves you having to chop a clove of garlic.
- Dried oregano
- Chili flakes - aka crushed red pepper flakes
- Salt and pepper
Tips for making Cream Cheese Pasta
This really couldn't be simpler. While you're boiling the pasta of your choice, warm some garlic-infused olive oil in a skillet. You could, of course, use regular olive oil and add some chopped garlic, but it's the only thing you have to chop, and I couldn't be bothered. Another option would be to sprinkle in some garlic powder.
Once you've sorted your garlic undertones, you'll add the cream cheese and let that melt a bit before adding the Parmesan cheese and herbs and spices. Stir this all together to incorporate. Then when your pasta's ready, use a slotted spoon to transfer it right into the pan with the sauce. If your sauce needs thinning, add a bit of the pasta water, and stir until you have a smooth and creamy sauce. That's it.

Ingredients
- 250 grams (½ pound) of your favorite pasta, such as penne
- 1 tablespoon garlic-infused olive oil
- 160 grams (¾ cup) cream cheese
- 30 grams (¼ cup) grated Parmesan cheese
- ½ teaspoon dried oregano
- ½ teaspoon chili flakes
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Bring a large pot of water to the boil. Add a big pinch of salt and cook your pasta according to package instructions, approximately 10 minutes.
- While the pasta is cooking, add your garlic oil to a skillet over medium low heat, then add the cream cheese and stir it as it melts.
- Next, stir in the Parmesan cheese, oregano, chili flakes, salt, and pepper.
- When your pasta is ready, instead of draining it in a collander, use a slotter spoon or fine mesh sieve to trasnfer it straight from the pasta pot to the pan with the sauce. You'll need a bit of the water to thin out the sauce, so this saves some washing up.
- Stir your pasta into the sauce, and if it's still too thick, add a bit more water from the pasta pot until the sauce is creamy and coats the pasta.
- Serve as is or with some delicious leftovers.
