    Creamy Sausage Dip

    This Creamy Sausage Dip is spicy, savoury, rich, and delicious. With tomatoes, chilies, and your favorite sausage, it's going to make your next gathering totally awesome.

    In the age of Tiktok and Instagram, there's a pressure to have everything in your life look absolutely perfect at all times. Whether it's your altar, your dinner, or your face, it seems we need to be camera ready at any given moment. I'm sure for some people there's some pleasure to be had in this emphasis on aesthetics, but for me, it just feels like extra work.

    I think we also miss out on a lot of great food because it's ugly. Some of the most delicious things we can eat are just sort of brown. Or maybe there's a bunch of delicious ingredients stirred together in a lumpy mess. It doesn't look impressive on the plate, but the experience of actually eating it will blow you away. I always say, food isn't cute once it's in my mouth, so I don't need it to be cute before I eat it.

    What makes Creamy Sausage Dip so awesome?

    This Creamy Sausage Dip is not winning any beauty contests, but the flavor is irresistible. Your favorite succulent and savoury pork sausage (or use a meatless substitue if that's your jam) gets browned and lightly caramelized in a skillet before stirring in tons of cream cheese and canned tomatoes and chilies. Pile that on a crunchy tortilla chip, and you're in heaven.

    A hot, cheesy dip is ideal party food in my opinion. I think it's especially awesome when your guests are all sitting around the same table and can all just scoop and crunch to your heart's content. That sort of closer quarters eating really fosters conversation, laughter and connection. That is if anyone can speak between all the yummy noises they'll be making.

    Magical Properties of Chili Peppers

    With their potent fire energy, chili peppers not only add a flavor punch, but they also add powerful magick to spells and recipes.     Ingredients

    Here's everything you'll need to make this dip. The full details are in the recipe card below.

    • Pork sausage meat - remove the casings if using links
    • Ground cumin
    • Red pepper flakes
    • Black pepper
    • Garlic - fresh or paste
    • Canned tomatoes with chilies - such as Rotel
    • Cream cheese

    For this recipe, all you'll need is a big skillet and a wooden spoon. If you're using fresh garlic, you'll need a knife and cutting board, or better yet, a zester.

    Tips for making Creamy Sausage Dip

    This is a simple dump and stir situation. You'll start by browning your sausage in a skillet until it's cooked through and has some deliciously caramelized bits. I like to add some extra spices as I find British sausages to be slightly bland compared to my favorite brands from the US. Adjust to taste based on the product you're using.

    Once your sausage is cooked, all that's left to do is stir in the remaining ingredients. Gently keep stirring as the cream cheese melts and you've got a deliciously combined if not super attractive mixture of deliciousness.

    I like to serve this with sturdy tortilla chips. Use your favorite dipping foods but be aware that delicate things like thing potato chips will probably just break under the weight of this hearty dip.

    How do I store any leftovers?

    Honestly, I'd be surprised if you had leftovers, but if you wanted to make this ahead of time or didn't quite finish it, just store it in the fridge in an air tight container. It will keep for a few days. Reheat it gently in a skillet or saucepan, or in the microwave, stirring frequently.

    Ingredients

    Scale
    • 8 oz Cumberland sausage, casings removed, or your favorite sausage
    • ½ teaspoon ground cumin
    • ½ teaspoon crushed red pepper flakes
    • ¼ teaspoon black pepper
    • 1 clove garlic, minced
    • 4 ounces chopped tomatoes with chillies
    • 8 ounces cream cheese
    • Sturdy chips for dipping

    Instructions

    1. In a skillet over medium heat, add your sausage and break it up into small pieces with your wooden spoon. Sprinkle in the cumin, red pepper flakes and black pepper, and stir to mix. Stir occasionally until the sausage is cooked through.
    2. Add the garlic and tomatoes with chillies. Stir to combine.
    3. Finally, add in your cream cheese, and stir until the cream cheese is melted and just starts to bubble.
    4. Transfer your dip to a bowl, or not as you please. Serve warm with your favorite tortilla chips.

    Notes

    • If you're making this recipe in the US, you can just use Jimmy Dean or another bulk breakfast sausage that you love. You may or may not want to omit the cumin and red and black pepper. American sausage is already well seasoned.
