    Easy Cheesy Stuffed Peppers

    I love things that are pure and simple. A black dress. A perfectly roast chicken. A well-phrased affirmation. Sometimes we feel the need to over-complicate things. I am definitely guilty of this from time to time. But the older I get, the more simplified I want my life to be.

    Occasionally, though, something can be simple and fancy all at once, and that's where the fun starts. You don't have to work that hard, but you've managed to really impress people. I think that's the sweet spot. A perfect haircut that's no fuss and falls in just the right way. Putting on a pair of cute heels with jeans and a t-shirt. Low effort, high impact. I love applying this principle in the kitchen as well.

    What makes Easy Cheesy Stuffed Peppers so awesome?

    These Easy Cheesy Stuffed Peppers are the perfect marriage of simple and fancy. Rice and ground turkey, some green chillies, a few spices, and a bit of cheese are all very humble. Serve that in a bowl, and it would look like dog food. But the moment you chop the top off a pepper and make that your edible bowl, suddenly your dish is high impact, high drama magic.

    This healthyish recipe was actually developed by my husband (which will come as no surprise to frequent readers). He loves peppers of all varieties, and while he'll usually opt for something that will bring you to tears, he also loves a sweet bell pepper. This recipe is highly customizable as well. Switch out the protein. Use your favorite microwave rice packet. Switch up the seasonings or add other veggies you have hanging around. It's the stuffing that makes it awesome. Get creative.

    How to make Easy Cheesy Stuffed Peppers

    Like I said, these are really simple. Sautee some green chillies in a skillet, then add in your ground turkey and seasonings and brown your turkey until it's cooked through, breaking it up with a wooden spoon as you go. Cook some rice however you like. In the microwave is totally fine. Add the turkey and the rice to a mixing bowl, and stir in some cheese.

    Chop the top off of about four to six bell peppers and scoop out the insides. Then just stuff as much of your turkey and rice mixture inside as possible. Place your stuffed bell peppers on a baking sheet, and bake them for about 30 minutes to soften the peppers. Sprinkle some more cheese on top before serving. That's it. You've got a healthy dinner that's also pretty impressive to behold.

    FAQ

    What other protein could I use in stuffed peppers

    Any ground meat or even a vegan substitute would be good here. Beef, chicken, pork, lamb, whatever you like. If you're using something with a higher fat content, like ground beef, I'd drain off any excess fat and liquid after browning the meat before mixing it with the rice. Otherwise, your stuffing will be a bit soggy.

    Bell peppers are much more mild and sweet than their more fiery cousins like jalapeno or cayenne. When you're looking for a more subtle approach in your spellwork, consider a big, juicy bell pepper. Their sweetness can attract love and desire.     Ingredients

    Units Scale
    • 1 tablespoon olive oil
    • 3.5 oz green chillies (diced)
    • 2 teaspoons cayenne pepper
    • salt and pepper to taste
    • 1 pound of ground turkey
    • 1 sachet of your favorite microwave rice
    • 3 oz sharp cheddar cheese, divided
    • 4 Bell Peppers (any color)

    Instructions

    1. Preheat your oven to 375 F (190 C).
    2. Add the chillies to a frying pan and cook until starting to brown.
    3. Add the turkey to the pan.
    4. Add in the cayenne pepper, salt and black pepper to season the meat.
    5. Cook until all the turkey has browned.
    6. Pop the rice into the microwave.
    7. Mix the turkey mixture, rice and 2 oz of shredded cheese together in a mixing bowl and put to the side.
    8. Cut the top off your bell peppers and remove the seeds and other innards.
    9. Fill your peppers with your turkey-rice-cheese mixture and place onto a foil-lined baking tray.
    10. Put the peppers into the oven for 30 minutes.
    11. Sprinkle some shredded cheese on top of the peppers and put back into the oven for a couple of minutes for the cheese to melt.
