    Egg Tortilla Pie

    This 5-ingredient Egg Tortilla Pie is filled with ham, cheddar, and two eggs. It's a brilliantly simple meal for two, perfect for breakfast or lunch. Just cut it right down the middle, or hey, eat the whole thing yourself. It's gonna be awesome.

    Slowly but surely the world is starting to open up again, and it feels weird. We're still firmly in lockdown here in Scotland, but I'm hearing about it on the news. It's definitely making me low key anxious. Are you emerging where you live? How's it going?

    I'm looking forward to the days where I can run to the store without it being a big deal. I don't have a proper mask, so I feel like I'll be shamed for wearing my headband tube thingy. I normally use it to keep bugs out of my mouth while I'm riding my moped. That reminds me, will I even remember how to drive once this is all over. So much is unknown.

    Whatever happens this month, we'll all definitely still need to eat. I've made you this Egg Tortilla Pie with ham and cheddar, and it realy couldn't be more simple. This is a Nigella Lawson recipe, but as you can imagine, it's highly adaptable. Take a look in your fridge and see what you want to toss in there. It's a perfect light meal for two. If you want to eat this all by yourself for dinner, I think that would also be fabulous.

    How to make Egg Tortilla Pie

    To make Egg Tortilla Pie, we're just brusing our pan with a little oil and pressing in a tortilla. Next, fill it with ham, eggs, and cheese, then top it with another tortilla which also gets brushed with oil. Sprinkle on even more cheese and plenty of hot sauce. Last, we bake it until the eggs are set and the edges of the tortilla are brown and crisp. Cut it right down the middle and eat it while it's still hot.

    Egg Tortilla Pie is filled with ham, cheddar, and cheese and topped with plenty of hot sauce for a quick and easy breakfast or lunch.

    Ingredients

    • 2 tablespoons garlic-infused olive oil or plain olive oil

    • 2 large flour tortillas

    • 2-4 slices of ham

    • 2 eggs

    • Pinch of salt, preferably sea salt flakes

    • 75 grams grated cheddar

    • Hot sauce to taste

    Directions

    • Preheat your oven to 200 C (400 F) Add about a teaspoon of your oil to a round pie pan or cast-iron skillet that's just a bit smaller than your tortillas. Use a pastry brush or even your fingers to grease the base and sides of the pan. Add your first tortilla to the pan.
    • Add your ham on top of the tortilla. I used four slices of thin deli ham. This recipe is definitely open to improvisation, so do what looks good to you. Next, crack in your two eggs on opposite sides of the pan. Sprinkle the eggs with a bit of salt. Finally, scatter about a third of your cheese over the eggs and ham.
    • Carefully add your second tortilla on top of your filling, being careful not to break your egg yolks. Gently press the edges of the tortilla down to form a bit of a "crust" for your pie. Brush the top of the tortilla with the rest of your oil, making sure you brush the oil all the way around the edges. This will make sure they edges are nice and crispy.
    • Scatter the remaining cheese over the top, then shake on as much of your favorite hot sauce as you like. We like lots. Bake this in the oven for 12-15 minutes depending on how well done you want your eggs. At 15 minutes, my egg yolks were cooked through but still tender. For a jammy or even runny egg yolk, take it out of the oven earlier. There's really no way to check, so you just have to experiment. Cut in half and serve hot.
