    Everything Breakfast Pastries

    Everything Breakfast Pastries are filled with egg and garlic and herb cheese, wrapped in a crunchy puff pastry crust and topped with flavorful everything bagel seasoning. These will bring so much joy to your morning.

    One of the perils of being a food blogger is frequent food nostalgia. You see, I take these photos about a month before I post them, so when I'm editing photos or writing recipes, I can only look at the delicious food, and all I can do is feel sad that I'm not eating it anymore.

    Delicious flavors and textures are so powerful in that way. They can take us right back into the moment of that experience just by seeing or smelling the dish that brought us so much pleasure. That's why kitchen witchcraft is such a game changer when it comes to setting a vibe. We all have such strong emotional attachments to certain foods, and if you can just find the right one and make it with love, you can make anyone feel good.

    What makes Everything Breakfast Pastries so awesome?

    These Everything Breakfast Pastries were such a joy to eat. There are lots of different flavors and textures going on. There's even a pleasurably audible crunch when you bite into the puff pastry that makes it a full sensory experience. The filling includes garlic and herb cream cheese which adds a tons of flavor for no effort. There are always cheesy, fluffy scrambled eggs that are so delicious.

    But it's the crunchy, flaky pastry topped with deeply savoury everything bagel seasoning that makes these extra special. I've made my own seasoning mix, and I'll give you instructions to do the same if needed. It just adds an extra depth of flavor and a bit of crunch that takes this experience to the next level. Bake these up for an awesome brunch for guests alongside a crunchy salad if you want to get fancy.

    Magical Properties of Chives

    Chives carry very mild onion energy. So there's fire energy and masculine Mars energy to bring protection and strength, but the power is not quite as in your face as with other stronger alliums. You can also call on chives to lift your spirits and block negative energy. Call on this little green shoots to bring balance and help you break bad habits.

    Ingredients

    Here's everything you'll need to make this dish. The full details are in the recipe card below.

    • Eggs
    • Fresh chives - You could also use green onions in a pinch.
    • Shredded mozzarella - The low-moisture variety, not the fresh stuff packed in water.
    • Salt and pepper
    • Hot sauce - Use your favorite variety or whatever you have on hand.
    • Puff pastry - A pre-rolled sheet is much easier to work with. Be sure it's thawed if you bought it frozen.
    • Garlic & herb cream cheese - You could also use scallion cream cheese or Boursin.
    • Everything bagel seasoning - Or make your own seasoning blend.

    How to make Everything Bagel Seasoning

    You can make as little or as much as you like depending on how liberally you want to sprinkle it onto everything you eat. Simply combine the following ingredients in a jar with a lid and shake to combine.

    • 1 part sea salt flakes
    • 2 parts garlic granules
    • 2 parts onion granules
    • 3 parts poppy seeds
    • 4 parts sesame seeds

    Tips for making Everything Breakfast Pastries

    Start by mixing up your egg mixture, but don't cook them until your puff pastry is prepped. In a mixing bowl, whisk together eggs, chives, mozzarella cheese, salt and pepper, and hot sauce. Beat this all together until your eggs are nicely homogenous.

    To prepare your puff pastry, unroll it onto the counter. Mine comes on parchment paper, so I just leave it on that while I'm working with it so it won't stick to the counter. Cut it into five or six rectangles, and spread each rectangle with cream cheese, leaving a half inch border to seal it up.

    Now go back to the stove and cook your scrambled eggs, stirring continuously until they're about 75% cooked. You want them to still be quite wet in the pan so they won't get overcooked in the oven. When you're eggs are ready, divide them amongst your pastries, adding the egg to just one half. You'll fold the other half over the top to close up the pastries.

    Then seal them up with some egg wash, transfer them to a baking sheet, egg wash the top, and sprinkle your seasoning over the top. Bake them until they're puffed, golden brown, and absolutely gorgeous.

    Ingredients

    Scale
    • 5 eggs, divided
    • 2 tablespoons chopped fresh chives
    • 4 ounces shredded mozzarella cheese
    • Salt and pepper, to taste
    • 1 teaspoon hot sauce
    • 1 sheet pre-rolled puff pastry, thawed if necessary
    • 6 ounces garlic and herb cream cheese, softened to make it easier to spread
    • 1 tablespoon everything bagel seasoning (see above to make your own)

    Instructions

    1. Preheat your oven to 375 F (190 C) and line a baking sheet or two with parchment or a silicone baking mat.
    2. Add four eggs to a mixing bowl and whisk to combine the yolks with the whites. Add the chives, cheese, salt and pepper, and hot sauce, and whisk again to bring it all together. Set aside.
    3. Roll out your puff pastry and cut it vertically into 5 or 6 rectangles. Spread an ounce of cream cheese onto each rectangle, leaving a half in border. I use an offset spatula for this.
    4. In a skillet over low heat, cook your scrambled eggs, using a rubber spatula to stir constantly, pullin the egg away from the pan until it's starting to hold together but still quite wet. They'll finish cooking in the oven.
    5. Divide your eggs amongst your pastry rectangles, adding them to one half of the rectangle. Beat your final egg to use as an egg wash. Brush a bit of the beaten egg around the border of each pastry rectangle before closing it up. You're going to hold onto the short edge of the rectangle to fold it over the eggs to close up your pastries. Press the edges together with your fingers to seal.
    6. Transfer your pastries to the baking sheet and brush the top of each with beaten egg. Sprinkle on your everything bagel seasoning.
    7. Bake for 25-30 minutes or until golden brown and puffed. Let cool for 5-10 minutes before eating.
