Even with Valentine's Day on the calendar, February can feel bleak. It looks like we're still going to be cooking from home for a little while longer, so here's a February Five Day Meal Plan to help make this month a little more awesome.
We've got a nice cozy, comforting week planned out because even though we're getting a bit more daylight, it can still be bitterly cold. Don't let those few eagerly budding flowers fool you. It's still soup season.
What's for dinner?
For Meatless Monday, we've got a Vegetarian Sweet Potato Shepherd's Pie made with lentils and a rich tomato sauce, then topped with sweet potatoes and sharp cheddar cheese. It'll warm you to your bones.
Mexican Mac & Cheese brings a little spice to everyone's favorite comfort food. There's also some chicken and extra veggies in there. If you want to make this vegetarian, though, just skip the chicken. Or use up leftovers by changing out the chicken for something else hanging out in your fridge.
A nice, hearty, chunky soup is exactly what we need to get us through the midweek slump. This Ham & Potato Soup definitely fits the bill. Serve it with some fresh bread so you can get every last drop. This Rustic Rye Bread would be pretty great.
We may be stuck at home, but we're still as busy as ever. This Garlic & Herb Baked Chicken is ridiculously simple. Serve it with some microwave steamed veggies or other prepared side for a dinner even picky eaters can't complain about.
Wrap up the week with some insanely delicious, nostalgic comfort food. Mini Cheddar Meatloaves are one of my all time favorites. With a side of Ridiculously Awesome Mashed Potatoes, I really don't see how you could not be happy.

Now that I know how easy they are to make and how awesome they taste, I'm obsessed with homemade Sea Salt Bagels. Customise this recipe with whatever toppings you like, and fill and spread them with all your favorite things. Breakfast is gonna be awesome.
Mix up a Lychee Mimosa for a Valentine's Day cocktail or Lunar New Year celebration.
Mix up some pink frosting and get out all your heart-shaped sprinkles for these sweet and soft Lofthouse Cookie Bars. The whole family will love them.
