As much as I love cooking, it can still sometimes feel like a burden. As much as it fills me with joy and connects me to spirit, there are still some days when I'm just too depleted. Part of our work as witches is to become more clearly aware of our energy, and to learn how to use it well. Sometimes, that means conserving our energy so we can be more powerful later.
But your body still needs food, and if you absolutely have to prepare it yourself, a sandwich may be slightly better than a bowl of cereal. And if you're going to make a sandwich, you might as well make it hot. And if you're exhausted and need a bit of comfort, then clearly there's only one answer. It's entirely possible that grilled cheese is the right answer to every problem.
What makes this brie grilled cheese so awesome?
This grilled cheese is ridiculous, my friends. It's got some good, hearty white bread at it's base. Use whatever you like. Then you spread each piece of bread with sticky sweet fig jam. Next comes a couple of pieces of salty prosciutto that you've crisped up in a dry skillet to make it crunchy. And finally, we're adding a bunch of creamy brie. Cover the whole thing in butter and grill until crunchy.
This is such a splendid combination of flavors and textures. Every bite is euphoric. Sweet, creamy, salty, crunchy, crispy, gooey. That's a pile of adjectives I want to experience every damn day. Witches have to take care of themselves. Eating something awesome is my favorite way to do that.

How to make a Fig Jam, Crispy Prosciutto & Brie Grilled Cheese
Nothing complicated here. We're just making a sandwich. Crisp up your thinly sliced prosciutto in a dry skillet for a minute or two per side first. Then spread your bread slices with fig jam and pile them up with brie and prosciutto.
I am firmly in the camp of spreading butter on the outside of your grilled cheese before putting it in the hot skillet. In my opinion, it gives you even crispness in a way that just putting the butter in the pan can't achieve. I've also tried mayo instead of butter, and I just don't think it gets your bread as crunchy.
Cook your sandwich over medium heat for about 3-5 minutes per side until it's golden brown. Try not to bite your fingers while you greedily shove this in your mouth.

I had to order my fig jam on Amazon, but you may be able to find it at your local grocery store. If you can't find it with the jam or other condiments, check with the fancy cheeses where they tend to display items for cheese boards.

Ingredients
- 4 slices of your favorite bread
- 2-4 tablespoons fig jam
- 4 slices prosciutto
- 4 ounces brie
- 2 tablespoons softened butter
Instructions
- Put a skillet over medium heat. Add your prosciutto slices to the skillet and cook for 1-2 minutes per side to crisp, then transfer to a plate.
- Spread fig jam on each slice of bread, cover on side with slices of brie, and two pieces of prosciutto per sandwich. Put the lid on.
- Spread softened butter onto the outside of the top piece of bread for each sandwich, then place them, butter-side down, into the skillet. While the first side cooks, spread the butter onto the outside of the other piece of bread.
- Cook 3-5 minutes per side until it's as brown as you like. Serve hot.
