Units Scale
  • 8 chunks canned pineapple*, chopped
  • 2 green onions, sliced
  • 1 tablespoon chopped fresh mint
  • 1 small jalapeno, finely chopped
  • 1/2 tablespoon lime juice
  • pinch of salt
  • 2 gammon steaks
  • 1/4 cup pineapple juice

  1. Add your chopped pineapple, green onion, mint, and jalapeno to a small bowl. Add the lime juice and a pinch of salt and stir to combine. Set this aside while you cook your gammon.
  2. In a large skillet over medium heat, cook your gammon steaks about 3-5 minutes per side. Check the package for more precise cooking times based on thickness. When your gammon is cooked through, remove it to a plate to rest.
  3. Add your pineapple juice to the skillet and use a wooden spoon to scrape up any sticky bits from your gammon. Crank up the heat and let the pineapple juice thicken and reduce by about half. Turn off the heat and add the gammon back to the pan, turning each steak once in the glaze to coat.
  4. Serve the gammon steak with a spoonful of pineapple salsa.

*Be sure to get pineapple canned in juice, not syrup. You can use that juice for your glaze.
