Gammon Steaks with Parsley Sauce make for a hearty and flavorful dinner that's always awesome. With the abundance energy of fresh herbs, it's a meal that will make you feel deeply satisfied.
I used to love any holiday where a whole ham was served. It's so much more flavorful than turkey. I actually can't wait to eat it. But making a whole ham for two people just isn't practical. When I moved to Scotland, I discovered the Gammon steak, and now I'm obsessed.
From what I've been able to glean, gammon is basically uncooked ham. It has the same salty, cured flavor and hearty texture, and it's easy to find at the supermarket in single serving sizes that make you feel like you're eating a real old school meat and potatoes sort of meal. And you can easily change up the flavor profile by simply adding a different sauce or glaze. Genius.
And of course, with the abundance energy of pork, it's like a money spell on a plate.
What makes Gammon Steaks with Parsley Sauce so awesome?
These Gammon Steaks with Parsley Sauce have a bright and vibrant flavor from fresh herbs. It's a super simple sauce made right in the pan you cooked your gammon steaks in. A little vinegar and honey balances sweetness and acidity. Some of the parsley goes into the sauce, and some is scattered fresh over the whole plate for a pop of color.
I love that this is so easy to make on a weeknight. Preheat the oven as soon as you get in. Pop some frozen chips on a sheet tray and get them cooking, then start your gammon cooking in a skillet while you mix up the sauce. It's all on the table in about 30 minutes. Add some peas or other veg, and dinner is done.
Magical Properties of Parsley
Tender parsley feels like summer to me, but it's traditionally tied to the underword, the dead, and ancestors. It can be used to celebrate Mabon and Samhain. My guess is that it was used in ancient funeral rites, but that's not confirmed. It's ruled by Mercury and the element of air, so it can also aid in communication and mental energy. Use parsley to honor Aphrodite, Archemorus, Persephone, and Venus. (Source: The Hearth Witch's Compendium by Anna Franklin)

Tips for making Gammon Steaks with Parsley Sauce
This is such an easy dish. You'll cook your gammon steaks in a hot skillet with the garlic oil. Check the package instructions to guide your cooking time. It will vary depending on the thickness of your gammon. While the first side is cooking, I like to add my sauce ingredients to a small bowl and whisk them together so they're ready to go later.
Once your gammon is cooked, remove them to your dinner plates, then turn the heat off under your skillet and immediately add the sauce and most of the fresh parsley. Scrape up any delicious brown bits and let your sauce bubble and thicken a bit. Pour this over your gammon steaks, then sprinkle with a bit of fresh parsley.
If you need a boost of abundance energy on a weeknight, tuck into Gammon Steaks with Parsley Sauce. It's gonna make you feel extra awesome.
