    Garlic & Herb Baked Chicken

    If someone can invent a "smidge of caf" tea, I will nominate them for a Nobel Peace Prize. I need a cup of tea that I can drink after dinner that will only keep me alert until about 9 pm, at which time I peacefully wind down and fall blissfully asleep by 10:30.

    Look, I just need to get through those couple of hours after dinner where any reserve energy I might have had after work is completely drained. I need just a tiny boost to help me keep this blog going on those weeknights when all my energy has been used up by other humans' problems. Get on top of that, people. It'll make you a millionaire.

    Garlic & Herb Baked Chicken

    I've got a great dinner recipe for exactly that kind of evening. The kind where everyone is depending on you to feed them, but you're so freaking tired, you want to cry. This creamy Garlic & Herb Baked Chicken is so easy, it almost shouldn't be allowed, and so good, you'll be able to get away with making it over and over.

    I love that it's quick cooking and made with only a few ingredients. We're taking some help by using flavored cream cheese and crushed up Ritz crackers. It saves you chopping fresh herbs and garlic, and even though I love those things, sometimes I just need a break. And honestly, any excuse to have a box of Ritz crackers in the house can only be a bonus.

    How to make Garlic & Herb Baked Chicken

    Start by chopping some boneless skinless chicken breasts. Stir together some mayo, some garlic and herb cream cheese, and some Parmesan cheese, then mix the chicken in with that. Transfer this to a small baking dish.

    You can also get out some frustrating by crushing up your buttery crackers by hand. Some bigger chunks add great texture. Stir some more parm into the crushed crackers, then sprinkle that over the top. Bake it in the oven for about 25 minutes. That's it.

    I serve this with microwave steamed veggies because that's what I like. Don't make things extra complicated.

    Ingredients

    Units Scale
    • 12 buttery crackers, such as Ritz
    • 4 tablespoons grated Parmesan cheese, divided
    • 4 ounces garlic & herb cream cheese, softened
    • ½ cup mayonnaise
    • 2-3 boneless skinless chicken breasts, chopped into bite-size pieces

    Instructions

    1. Preheat your oven to 200C (400F) and lightly spray a small casserole dish with oil or non-stick spray.
    2. In a small bowl, crush your crackers, not too fine. Texture is good here. Stir in two tablespoons of grated Parmesan.
    3. In a separate, larger bowl, mix together the cream cheese, mayonnaise, and remaining 2 tablespoons of Parm.
    4. Add your chicken pieces to the cream cheese mixture, and stir until evenly combined. Transfer the chicken and cream cheese to your casserole dish. Sprinkle the crushed cracker mixture over the top.
    5. Bake this in the oven for about 25 minutes. The chicken should be cooked through, and the cream cheese will be hot and bubbly. Serve hot.
