I absolutely love this low-alcohol Ginger Pomegranate Cocktail. With just three ingredients, you can create an absolutely beautiful cocktail you will want to drink all night.
Hi, friend. How are you? Can I pour you a drink? What's happening? Tell me all about it. It's been so long since we've been able to catch up properly. How's your heart?
Normally it's pretty easy for me to sit down and write a few paragraphs about life, the universe, and everything. Today, though, with my sleep deprived brain and the lingering heaviness of the world, I'm faltering. My brain is bouncing around between food photography and racists rioting with the police in the streets of my city and what I'm going to make for dinner. I can't seem to make them land in any one place? Does this ever happen to you?
I guess the message here is make sure you get enough sleep. I feel like such a mom saying this right now, but it really is so important. From the moment my alarm went off this morning, I knew I'd suffer the effects of sleep deprivation all day. And now you're having to read this drivel and we're all suffering. I'm so sorry.
So tonight, perhaps you should fix yourself a nice low-alcohol cocktail after work, take a nice warm bath, douse your bed in lavendar pillow spray, and have an early night. You've earned.
What makes this drink so awesome?
Speaking of low-alcohol cocktails (wink wink), this Ginger Pomegranate Cocktail might be my new favorite. It's mostly just juice and ginger ale with a shot of pomegranate liqueur. You could leave the liqueur out all together, and it would still be sweet and refreshing and irresistible. Totally up to you.
This drink might be my new favorite. The color is absolutely gorgeous, and I love anything with a bit of ginger. Pomegranate juice can be a bit much on its own, so these two flavors compliment each other really well. And yes, I only added the pomegranate seeds to make the photos look prettier. There is absolutely no need to mess around with garnishing just to make a drink for yourself on a Tuesday night while you rewatch Friends for the hundredth time. Unless you really want to.
How to make a Ginger Pomegranate Cocktail
It always seems a little silly to write a recipe for a mixed drink, but you can scroll down for the very uncomplicated instructions. Basically, mix one part pomegranate liqueur with two parts pomegranate juice and two parts ginger ale. Pout it over ice and garnish, or not, to your hearts content.
This recipe comes from Queen Nigella in her book Nigella Express. She's a genius and we should all adore her.
Life is complicated and beautiful all at the same time. Slow down, have a Ginger Pomegranate Cocktail, and let it all sink in. It's gonna be awesome.

Notes
This drink can easily be scaled up to make a pitcher if you're serving lots of people. Just keep the proportions the same and add the ice to the cups, not the pitcher, so it doesn't get watered down.
