I'm tucked under a fleece blanket, and the snow is fallng outside my window. We live in the middle of a city, so we don't get to experience a blanket of white virgin snow, but I also live in a third floor flat (that's actually the fourth floor for Americans). They take me straight back to my childhood and languid weekend mornings with cartoons in the background and the smell of bacon coming from the kitchen. An epic weekend breakfast meant there were no dance practices or soccer games to go to. Everyone could just relax. We need more of those vibes right now.
How to make Homemade Vanilla Pancake Mix
Making pancake mix is really just about pre-mixing your dry ingredients and having them ready whenever the mood for pancakes might strike. What makes this pancake mix extra awesome is the addition of vanilla sugar.
And to get vanilla sugar, all you have to do is stuff a vanilla pod into a jar, fill it with sugar, and let it hang out in your cupboard. You can use a vanilla pod that's already had the beans scraped out for another recipe. This is just a way to use up every last drop of exquisite vanilla flavor. You could just use regular sugar in the mix then add a splash of vanilla extract when you mix up the pancakes if you don't have any vanilla sugra on hand.
Seriously, though, all we do is add some flour, baking powder, baking soda, salt, and vanilla sugar to a bowl. Then whisk it gently to make sure everything's thoroughly combined. Ingredients
For the pancake mix:
- 300 grams all-purpose or plain flour
- 4-½ teaspoons baking powder
- 1 teaspoon baking soda or bicarbonate of soda
- ½ teaspoon salt
- 20 grams vanilla sugar or regular white sugar
For pancakes:
- 150 grams pancake mix
- 1 egg
- 250 ml milk
- 1 tablespoon (half ounce) butter, melted
- ¼ teaspoon vanilla extract (if you didn't use vanilla sugar)
Instructions
For the pancake mix:
- Add all ingredients to a mixing bowl and combine thoroughly with a whisk. You definitely don't want anyone biting into a clump of baking powder down the line.
- Transfer your pancake mix to an air-tight container until you're ready to make pancakes.
For pancakes:
- Measure out 150 grams of your pancake mix into a large mixing bowl.
- In another bowl or a measuring jug, whisk together the egg, milk, and melted butter until well combined.
- Add your wet ingredients to your pancake mix, and stir gently until just mixed. A few small lumps are fine. You don't want to overmix or your pancakes will be tough.
- Scoop your pancake batter about a ⅓ cup at a time onto a pre-heated skillet or griddle and cook two to three minutes per side or until cooked through.
- Serve hot with something sweet.
Notes
You could easily double the pancake mix recipe if you have a big family or make a lot of pancakes. Just be sure to store it in an air-tight container.
