Honey Vodka

Ingredients

  • 1/2 cup sugar
  • 1 tablespoon cold water
  • 1 cup boiling water
  • 3 whole allspice berries
  • 1 small cinnamon stick
  • 1 whole clove
  • 2 strips of lemon zest, removed with a vegetalbe peeler
  • 1/2 cup honey
  • 1/2 cup vodka
  • 1 tablespoon lemon juice

Instructions

  1. Add your  and cold water to a saucepan over low heat. Let the sugar dissolve and bubble for a few minutes until it starts to turn a light amber color. This could take a while so be patient. 
  2. Carefully pour in your water from a just boiled kettle, and watch out for splatters. Add your allspice, cinnamon, cloves, and lemon zest, and let this boil gently for about five minutes.
  3. Stir in the honey until it's dissolved. Return the whole mixture to a boil, then take it off the heat.
  4. Add the vodka and a tablespoon or so of lemon juice (squeeze in the juice from a quarter of your lemon you peeled earlier).
  5. Strain the mixture to remove the spices and serve warm.
