When you're looking for something a little different, try this Hummus & Egg Toast with Sun-Dried Tomatoes & Chives. It's so simple but hits you with a variety of flavors and textures. It's gonna be awesome.

Who invented toast? Who took a cooked thing and said, let's cook it some more? And why is it so awesome? How can that extra blast of heat create something so unique and flavorful? Toast is a miracle. I think it's an awesome way to work with the elements of earth and fire.

And yeah, fancy toast is super trendy. Everybody's fanning their avocados and sprinkling them with black sesame seeds for the 'gram. But don't let that stand in the way of you enjoying something outrageously pleasurable. Toast has been around for ages, and it's not going anywhere. You can make it and eat it without ever taking its picture if you want. Do what makes you happy, kids. That's all I've ever wanted for you.

What makes Hummus & Egg Toast so awesome?

This toast is spread with a layer of savoury and acidic hummus then scattered with bits of sun-dried tomatoes for a hit a sweetness. I did sort of fan a hard boiled egg for photography purposes, but you can just slice it and plop it on there. Then scatter some fresh chives over all that and sprinkle it with some salt (get out the good stuff if you got it) and a couple of grinds of black pepper.

We've got crunchy, creamy, rich, and bright all at once. This is not your same ol' boring lunch. There's flavor coming at you from every direction, and if you boil some eggs ahead of time, you can assemble the whole thing in about five minutes. Use whatever bread you have on hand. I ended up just using my everyday sandwich bread, and it was awesome. But go for something fancier if you like.
