Summer is pretty much upon us. Let's keep it fresh and cook outdoors in this awesome June Five Day Meal Plan. We've got a week's worth of easy recipes, plus a weekend breakfast, drink, and dessert. You're gonna love it.
What's for dinner?
For meatless Monday, how about this simple Potato & Spinach Curry. Absolutely no shame in using microwave rice if that makes things easier for you. If you need to make it vegan, just swap in a plant-based yogurt.
If it's getting a bit warm for indoor cooking, try this Turkey Scallopini. The thin turkey cutlets cook up super fast, so you only have your stove on for a few minutes. Parmesan Fried Gnocchi are a perfect, equally quick side dish.
Summer is the perfect time for a DIY meal. Mix up some Whipped Feta, and get someone else to be on toaster duty. Buy a few nice looking antipasti/meze type things for toppings, and let everyone create their own ideal meal. It's perfect for a weeknight.
A simple, light pasta seems perfect for June. Get your fresh herbs out for this Spaghetti with Garlic Lemon Bread Crumbs.
Throw some chicken or sausages on the grill and serve them up with these Grilled Potato Foil Packets with Lemon Dill Creme Fraiche. It'll be an absolutely beautiful Friday meal.
What else are we eating?
It's always the right season for Bacon Pancakes. I wish I was eating them right now. Add some fresh summer fruit if you must.
Let's make a Sex on the Beach. It's summer vacation. What else are you gonna do?
This Cookies and Cream Fridge Cake might be my favorite no-bake dessert. Let the kids help for a little summer vacation project.
