The good news is that you don't need to marinate your chicken for hours and hours. If you forget to do this the night before, you can still have delicious food with only a short soak. Technically, it's just flavoring the outside of the meat, but that can still have a big impact on the final result.

This Lemon Chicken Marinade only has a few ingredients, but each one is deeply flavorful, so they're going to wake up your chicken and make it taste bright and beautiful. With sunny lemon and oregano along with bold garlic and deeply savoury soy sauce, you're hitting all the crucial flavor notes.
Use this on any part of your chicken. You can even chop up some chicken breast and thread them on skewers before grilling. The possibilities are endless. My preference is to grill the chicken, but you could bake it as well. Make a big batch and use leftovers in salads, wraps, or sandwiches for lunch throughout the week. It's so versatile and good with everything.

Here's everything you'll need to make this recipe.
- Olive oil - You might be tempted to use extra virgin for added flavor, but if you're going to grill your chicken, be aware that it can burn. I use regular olive oil.
- Lemon juice - bottled is fine if you don't want to squeeze lemons
- Soy sauce - Worcestershire sauce would also work
- Garlic - fresh or paste
- Salt
- Pepper
- Chicken - whatever you feel like cooking
Tips for making Lemon Chicken Marinade
The easiest way to make this is to shake all the ingredients together in a jar, but you can also whisk them together in a bowl. If you still use zip top bags, this is a great vessel for marinating your chicken because there's great surface area contact for the meat. You can also go into your fridge and give it a bit of a squish from time to time. Not sure if it technically does anything, but it feels like you're really working the flavor in. But if you don't have a bag, just use a bowl and turn your chicken over or give it a stir every so often.
As I said earlier, marinating doesn't technically do anything to tenderize the chicken, but it does add flavor to the outer layer of the meat, so even if you can only marinate your chicken for 15 minutes, it's better than nothing. I think a few hours is great, but if you want to start marinating the night before, that's also awesome.
When you're ready to cook your chicken, you can just transfer it right to the grill or pan from the marinade. Discard any leftover marinade, though, as it will be contaminated by raw chicken. Grill or otherwise cook your chicken to succulent perfection and commence to feasting.

Ingredients
- ¼ cup olive oil
- ¼ cup lemon juice
- 1 tablespoon soy sauce
- 1 garlic clove, minded
- ¼ teaspoon dried oregano
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
- 2 boneles skinless chicken breasts or other chicken pieces
Instructions
- Add all your ingredients (except the chicken) to a jar with a tight-fitting lid, and shake to ocmbine. Or add them all to a bowl and whisk to combine.
- Add your chicken to a zip top bag or other container, and pour the marinade over it. Allow the chicken to marinate for at least 15 minutes or up to overnight. Store in the fridge until ready to cook. Turn or stir occasionally if you'd like, but it's not absolutely necessary.
- Remove chicken from marinade and cook in your favorite way.
- Discard any leftover marinade.
Notes
Simply double the marinade recipe if you're preparing a greater quantity of chicken.
