As much as I love a ridiculously chocolate dessert, I can be easily swayed by a tart and tangy lemon treat, especially in the spring. Lemons are for sure a high vibe food in my book. How do lemons make you feel?
What makes this Lemon Cream Sauce so awesome?
This Lemon Cream Sauce is silky, rich, and bright. It's the perfect balance of savoury and acidic. The lemon flavor really bursts through the fatty cream, and it coats your tongue in a deeply satisfying way. I honestly had a hard time not eating this. Because it is a cream-based sauce, it doesn't reheat very well, so make just enough for the number of people you plan to serve. For that one meal, though, they'll all be extremely happy.
And while I'll happily eat this with nothing but a long, wide pasta like linguine or fettucine, you could definitely add tings to the pasta or serve the sauce with just a protein. Personally, my top choice will be grilled chicken served with the pasta, but you could also add some broccoli to this situation. Or try serving the sauce with steamed baby potatoes along with some chopped fresh parsley. I'm guessing this would also be awesome with fish. Give it a try and let me know.

- Butter - salted or unsalted are both fine here, just taste it before adding additional salt at the end
- Garlic - fresh chopped, grated, or garlic paste would all suffice
- Olive oil
- Lemons - you'll use the zest and the juice, so go ahead and actual lemons
- Cream - heavy or double cream
- Parmesan cheese - the best you can get, and if that's from a green bottle, it's still good
- Pasta of your choice - I like linguine for this, but use what you got. I always think long pastas are best for most cream sauces, though.
Tips for making Lemon Cream Sauce
This recipe doesn't reheat well, so consider how many servings you want to make on the day, and adjust accordingly. This recipe can be halved or doubled pretty easily.
You'll start by melting your butter in a skillet, then adding the garlic, lemon zest, lemon juice, and olive oil. Then add the cream, and let it bubble gently to thicken. Then stir in the Parmesan cheese. Taste for seasoning, and add more salt if you like. I also love black pepper, so I added a few grinds of that as well.
Of course, you'll be cooking your pasta in the background of all this. You can skip washing a colander by simply transfering your cooked pasta from the water to the sauce using tongs. Toss this all together, then if you feel like your sauce is too thick, stir in some additional pasta water a couple of tablespoons at a time until it's as saucy as you want. How easy is that?

Ingredients
- 8 ounces linguine or pasta of your choice
- 2 tablespoons (1 ounce) butter
- 2 teaspoons garlic paste or 2 garlic cloves, chopped
- 1 tablespoon olive oil
- Zest and juice of 1 lemon
- ½ cup (150 ml) heavy or double cream
- 1 ounce (3 tablespoons) grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Bring a pot of water to a boil, add salt, and cook your pasta according to the packet instructions.
- In a skillet, melt your butter over medium low heat, then add the garlic, olive oil, and zest and juice of your lemon. Cook until fragrant.
- Stir in the cream and bring it to a simmer. Allow it to bubble gently for 3-5 minutes to thicken.
- Stir in the Parmesan cheese. Taste for seasoning and add salt and pepper to your liking. Turn the heat off under the sauce.
- When the pasta is ready, transfer it directly from the pasta pot to the skillet with the sauce using tongs or a pasta spoon. There will be more pasta water transfered over, but we want that. Toss the pasta in the sauce, and if it needs thinning, add in a couple of spoonfuls of pasta water.
