    Lemon Linguine is a quick and easy meatless pasta dish that will brighten up any weeknight. A simple no-cook sauce comes together simply but packs a ton of flavor. It's gonna be awesome.

    As witches, we strive to create a spiritual connection and find magic in the everyday, but the mundane world we live in can't be ignored. We all have bills to pay, jobs to do, bodies to look after, and people who need our care and attention. We know it's best to live a high vibe life, but sometimes it's a challenge to just keep yourself in basic working condition. Some days you're surviving more than you're thriving, and that's just a reality we're better off accepting.

    I'll say it again, this is the unique power of kitchen witchcraft. Even if you're not cooking an elaborate meal or preparing something in a ceremonial fashion, you still have to eat several times a day. It's just a fact of life. So it's easy to sneak in a litte mindfulness or a gratitude practice, even if you have to eat in the car between work and dance class. It's an opportunity to acknowledge your human body and thank it for all the hard work it does for you.

    What makes Lemon Linguine so awesome?

    I also don't believe a recipe has to be complicated to be magical. Take this Lemon Linguine. It's so simple with just six ingredients. You make the sauce in a measuring jug, and it just gets cooked by tossing it with the hot pasta. It's perfect for a busy weeknight when you just can't bear to have take out or go through the drive-thru one more time.

    Made with cream, egg, lots of Parmesan cheese, and of course lemon juice and zest, this pasta is full of flavor. It's both savory and bright. I also love a good grind of black pepper just for the slightest touch of fire energy to wake me up. If I have fresh parsley on hand, I'll just snip into it with some scisssors at the end. You don't even need to get out a cutting board for this recipe. And it's so good, you're gonna want to eat it again and again.

    Using Lemons in Witchcraft

    Lemons are tied to the moon and the element of water, so they can help you connect with your intuition and your subconscious mind. They also have strong cleansing properties, like all citrus fruits. Use lemon in a spell to help you clear your mind and heighten your intuition. Allow the bright energy of lemon to clear away anything that might be clouding your subconscious mind and clear the way for your higher self to speak more clearly.

    Tips for making Lemon Linguine

    Like I said, this Lemon Linguine comes together so easily. While you're boiling your pasta, measure and whisk together your egg yolks, cream, Parmesan, lemon zest and juice, and salt and pepper. Set that aside until the pasta is ready.

    When your pasta is perfectly cooked, drain it and add it back to the hot pan. Reserve a bit of the pasta water in case you want to thin out your sauce later. Then add plenty of butter to the hot pasta and use your tongs to toss the pasta in the butter as it melts, coating each strand. Then pour in your sauce and keep tossing. If it's a bit thick, add a tablespoon at a time of your starchy pasta water until it looks good. You want your pasta coated, not swimming in sauce. Add some fresh parsley before serving if you have it.

    Is lemon linguine good leftover?

    It's fine. It's definitely not as good as the first time around. The pasta will absorb much of the sauce, so it will be a bit drier. I still eat it, though, and happily. It's just best the first time around.

    What can I serve with lemon linguine?

    I like nothing more than to just eat a big bowl of pasta, but this would also be awesome with some grilled chicken or maybe grilled asparagus or zuchinni.

    Lemon Linguine is a quick and easy meatless pasta dish that will brighten up any weeknight. A simple no-cook sauce comes together simply but packs a ton of flavor. It's gonna be awesome.

    Ingredients

    Units Scale
    • 1 pound linguine
    • 2 egg yolks
    • ⅔ cup heavy cream
    • ½ cup grated parmesan
    • zest of 1 lemon
    • juice of half a lemon
    • salt and pepper
    • 4 tablespoons butter
    • parsley for garnish, optional

    Instructions

    1. Fill a large pot with water and put it on a burner cranked all the way to high. Slap a lid on it, and let it come to a rapid boil.
    2. Once water is boiling, add a tablespoon of salt, then stir in the linguine. Cook for about 9 minutes, stirring occasionally. Before draining the pasta, pull out a half cup or so of water, in case you need to thin your sauce a bit.
    3. While you're waiting for your water to boil and your pasta to cook, combine egg yolk, cream, Parmesan, lemon zest and juice, and salt and pepper in a small bowl. Whisk to combine. 
    4. Once you've drained your pasta, return it to the hot pot. Add the butter to the pasta, and toss the pasta until the butter is melted and the strands are coated.
    5. Add your sauce and give everything a good stir to get each bit coated in sauce. If you want things to be a bit more loose, add a tablespoon or two of your starchy pasta water.
    6. Tear some parsley over the top, if you're feeling fancy.
