  • 1-2 teaspoons lemon juice
  • 250 ml double cream or heavy cream
  • 1 meringue nest


  1. Put the lemon curd into a small bowl and stir in the lemon juice to thin it out a bit.
  2. Whisk the cream in a large mixing bowl with an electric mixer until stiff peaks form. Fold in the lemon curd mixture.
  3. Crumble the meringue nest into the mixture and fold in the crumbs.
  4. Divide the mixture into four dishes or ramekins. Serve immediately or cover with plastic wrap to eat later.
