    Lemon Victoria Sponge

    This Lemon Victoria Sponge is a simple and delicious cake full of bright, zingy flavor. Two layers of fluffy, buttery sponge cake are held together with tart and tangy lemon curd. It's absolutely awesome.

    I really love cultures that have a tradition of something pleasurable in the afternoon. Whether it's a siesta in Spain complete with a nice long nap, afternoon tea with fluffy scones, or a two hour lunch in France, I'm all for making conscious space for joy in your day. It does wonders for your vibration to give yourself a break and enjoy life's little pleasures.

    I'm especially fond of the traditions that involve cake. One I'd like to adopt is the Swedish tradition of fika. I'm not Swedish, so not an expert, but it seems to involve coffee and a sweet treat in the afternoon. But there's also a social aspect to fika. It's not just jamming a piece of cake into your face while standing over the sink in the office. It's sitting down with people who's company recharges you, slowing down, and enjoying each other as much as you enjoy the cake. Does anyone want to fika with me?

    What makes this Lemon Victoria Sponge so awesome?

    A Victoria Sponge Cake is a British classic. Perfect for afternoon tea or any late in the day pleasure-filled traditions. This one is filled with sweet and tangy lemon curd for a bright, sharp flavor. You could also add sweetened whipped cream to the filling, though this is best if you're planning to eat the whole cake in one day. I like to sprinkle mine with powdered sugar, and I sometimes add some whipped cream with each slice.

    Make this for dessert when you gather friends for dinner. Bring it to a party, meeting or gathering to cheer things up. Feature it as the sweet centerpiece of a baby shower. There's no wrong time to eat this cake. People will absolutely love it whenever you offer it to them.

    Magical Properties of Lemon

    Though lemon has a bright, sunny flavor, it actually corresponds to the moon and is ruled by the element of water. Like all citrus fruits, it carries cleansing and purification properties. With its uplifting energy, it can be used to call in clarity and rejuvenation. Use lemon in spells for love, happiness, prosperity, unity, and friendship. This fruit also corresponds to the solar plexus chakra, the goddes Diana, and the zodiac signs of Cancer and Pisces.

    Ingredients

    Here's everything you'll need to make this recipe. All the details are in the recipe card below.

    • Baking spread - or margarine if you're not in the UK
    • Sugar - caster or granulated sugar
    • Eggs
    • Self-rising flour
    • Baking powder
    • Lemon curd - homemade or store bought are both awesome

    Tips for making Lemon Victoria Spone

    This is a super simple one bowl cake. Simply add all your ingredients to a big mixing bowl and beat with an electric mixture until you have a smooth, light batter. You don't even need to bring anything to room temperature as baking spread can be used straight from the fridge. If you live somewhere that doesn't have baking spread, you can substitute margarine. You don't want to overmix your cake, but as long as you don't walk away and leave it mixing for 10 minutes, you'll be fine.

    Pour your batter into two round cake pans, and spread it evenly in the pan. To test if your cake is fully baked, gently press a finger into the top. If it's ready, it should spring back. Leave the cake to cool in the pan for about 5 minutes, then turn your layers out onto a wire rack to cool completely.

    To assemble, all you have to do is spread a generous amount of lemon curd onto one layer, pop the other one on the top, the sprinkle the whole thing with a dusting of powdered sugar. Then simply cut a generous slice for you and a friend, and sit back and relax.

    Ingredients

    Scale
    • 225 grams baking spread or margarine
    • 225 grams caster or superfine sugar
    • 4 large eggs
    • 225 grams self-rising flour
    • 1 teaspoon baking powder
    • ½ cup lemon curd*
    • 2 tablespoons powdered sugar, optional

    Instructions

    1. Preheat your oven to 180 C (350 F) and butter and flour two 8-inch round cake pans. You may want to also line them with parchment paper for extra insurance against sticking.
    2. Add the baking spread, sugar, eggs, flour, and baking powder to a large mixing bowl. Beat with an electric mixer until blended and smooth.
    3. Divide your cake batter evenly between your two prepared baking pans, then smooth out the batter into an even layer. Bake for 25-30 minutes or until the cake springs back when pressed gently.
    4. Leave the cake to cool in the tin for about 5 minutes, then then out your layers onto a wire rack to cool completely.
    5. When your cake layers are cooled, move one layer to its final destination, then spread it with a generous layer of lemon curd. Top it with your second cake layer, and sprinkle it with powdered sugar if you like.
    6. Store in an airtight container. This is best eaten within three days.

    Notes

    *Don't stress about the measurement of the lemon curd. Just spread it on until it looks like enough.
