March can be a bit volatile, but nature is definitely asserting itself. This March Five Day Meal Plan works to balance the emergence of fresh ingredients with the need to stay warm a little while longer.
We've got two meatless recipes this month, both with spinach which is coming into season. I've also thrown in some bright, citrussy flavors to evoke that sun we're all hoping to see more of in March. Let's get to it.
What's for dinner?
We're taking it easy and keeping it flavorful this Meatless Monday with this Chickpea & Spinach Curry. This recipe is so low stress. You'll love it.
Never not wanting a big bowl of Bacon Carbonara. Another super simple weeknight dinner. There's a huge flavor pay off here. It's pure comfort.
Okay, so I doubled up on the pasta, but these Spinach & Ricotta Stuffed Shells are cheesy, and tomato-y, and so warming. Plus, it's another meatless recipe. Look at me go with all these leafy greens. Get a loaf of crusty bread for mopping up your sauce.
Crunchy Lemon Chicken is ready in a matter of minutes. May I suggest making some Cajun Sweet Potatoes to go along side if you have the time . They require a longer cooking time, but very little effort. Both recipes are delish.
I think a Friday pizza night would be so fun. You make the Homemade Pizza Dough ahead of time (up to a week), and there's enough for four pizzas, so you can mix and match and let each family member customise their own pizza. How awesome is that?
What else are we eating?
Any day that starts with Whole Wheat Pancakes is gonna be awesome. Top them with fruit or nuts, or go traditional with butter and syrup. No matter what, they're gonna be awesome.
Something about the color of this Carrot Ginger Orange Mimosa just makes me feel more alive. Mix the juice separately so people can decide if they want sparkling wine or sparkling water added in. You're gonna feel all sparkly after drinking one.
A sticky sweet Lemon Loaf Cake is exactly what we need to get us through a long and unpredictable month. This one is irresistible.
